The Subways here in my state began to sell Vicky’s and the Jalapeño flavor is the best one, every time I order online from the subway, it’s either out of stock or available on the menu.
Order them online if and when you can because it’s worth it. Probably one of the only bags of chips that has flavor and doesn’t feel like that artificial bs that Lays makes

A tip for frying potatoes. It helps to first blanch in water (to take out unnecessary starch) and then you do an initial quick fry for about a minute. Let them cool, and then fry again until desired color. But yeah, the most important step is to slice, and then blanch in water. You can even cut them ahead of time and house them in a Cambro (or Tupperware) until you want to fry more chips. Too much starch fucks the chips (and frys) up

Not necessarily, kettle style chips like Miss Vickie's don't rinse out the extra starch. They cook at a lower temp for longer to get a more caramelized flavor and a sturdier texture.

@@gelosobrepena4508 they do rinse out the extra starch. No clue where your info is from or why you're getting likes but they all do. Bubbles with significant lift on chips are otherwise nearly impossible.
Hell no first slice the wash then boil for 3min in medium heat put that it freezer take the temps to 15-16 then drop them in 200° oil for 15 secs then drop those in 350° for as long as you get the desired colour then take those out and put the seasoning.
Edit:- actually the freezer temp is in celcius and the oil in farenhite

It's probably the spice mix that's the problem, since there's a bunch of missing ingredients. It's definitely missing sugar, I recommend using brown sugar but grind it to a powder first. Dextrose is just another way of saying sugar. He could have also added some smoked paprika and then grounded up some red chili flakes or dried red chilies with the dried jalapeños. MSG isn't always needed. But you could add it if you want.
Edit: The type of potatoes that you use for the chips also matter a lot. Russet Potatoes or similar types of potatoes are best.
Not really, dextrose is another way of saying glucose(which is sugar in general). However, table sugar or sucrose is disaccharide that consists of fructose and glucose. Not sure if it will affect taste though, but i suppose that ot will change proportions as the sweetness is most definitely different

I said to use brown sugar not because I think it's the same thing as dextrose (which I don't), but because I recognize that the dextrose was used to add sweetness to the flavor of the chips and brown sugar would also do the same... and more. Adding brown sugar to a recipe is like adding molasses or maple syrup to a recipe. Yes, they act as sweeteners but they also bring their own flavors into the mix. It's the reason why some recipes call for brown sugar instead of white sugar or a mixture of white sugar and molasses or a mixture of white sugar and brown sugar. It just tastes different.
I haven't tasted that chip's brand, but i assume there's a ton of MSG as well lol

*First* , slice potatoes real thin and wash 2-3 times to get rid of the starch .
Then
Boil some salted water , put the potatoes in , immediately take it off the heat ,cover and rest for 10-15 minutes
Then , take the potatoes out , pat them dry and fry in hot oil , till crispy and golden .
Add MSG (powdered) to your seasoning mix …. Sprinkle , and I believe it would be good .

Potatoes cut too thick, also I think they might soak their Potatoes in something to keep them from browning too soon. Also it could be your oil was a little too hot. When you dehydrate your jalapeños, cut out the white pith, because that is the bitter part of the pepper. Also your ratios might be off for your seasoning

Our school has Miss Vickie’s jalapeño chips, still need to try them.
You need to use the right kind of potatoes...yukon gold or russet. And you need to rinse them really well to remove all the starch then soak them in ice cold water with a good splash of white vinegar for a few hours. Then dry the potatoes thoroughly and fry in oil at low temp until the potato slices are cooked but not crispy, drain them well and let them cool down properly. Finish cooking the chips in small batches in hot oil this time, until lightly brown and crisp then drain well and season.
Try adding a good shake of msg, a little sugar and a pinch of citric acid to your seasoning blend. And use flaky sea salt, instead of table salt.
That should get you nice results! 😁

Yeah you forgot the Torula Yeast which enhace the flavour with its umami taste , if you cant find it , you can use MSG . Also you forgot the sugar (dextrose) ans the whey powder ( liquid remaining after curdl and strain the milk )

For those who have peanut allergies, peanut oil will not give you an allergic reaction
Normal Condiments have bigger particles that doesn't stick to the chips , try making it more fine , with addition of MSG and Citric powder , plus they season while it's piping hot for better results

That tortilla yeast on the ingredients list I'm pretty sure is used as an MSG-like, Savory/Umami flavor, similar to marmite.
