I made this and it turned out great. Though... i would recommend letting the caramel set in the freezer before pouring the ganache. Else, when you pour the ganache, it could displace the caramel. When the whole tarte is set in the freezer as well.., then that's when you sprinkle the salt for decor. If the ganache is too warm, it'll just dissolve and be gone. I'd make this again.
Donal, I love this recipe, and the excitement and energy you bring to your videos. One quick tip, to save time and risk of cracking the shell triming it after you bakeit, try this; once your dough is set in your tart oand and pricked, run your rolling pin across the top of the pan. This will give you lovely flat and clean edges, then line, weight, and bake.

Hallelujah! Finally someone who doesn't say how important it is to use a sugar thermometer and that its so important to not have a single crystal of sugar in that pan, because then the caramel will be ruined!
You don't need those things! I've NEVER used one of those thermometers and my caramel got right every single time!

This looks so good! If you roll your rolling pin over the top of the tart pan before you bake it, it'll trim off the scraps so you don't have to remove them afterwards (:

valentine's day is the first day of break so i will definitely be making this to celebrate
I was surprised at how simple this recipe actually is, so I may give it a go. Although the one thing is I don't have those baking beans or a tart tin, because I've never tried baking tarts before, but hopefully I will be able to get some(convince my mum its a good idea)
You can use plain simple raw beans! No need to buy anything fancy x
You can use any type of weight instead of baking beans! You can use coins, rocks, people, just make sure you have some foil or paper covering your tart!
Humaad Raja Like the guys said below, it doesn't have to be baking beans. You can even do it with dry rice. :)

This is delicious. I made this with marmalade swirled into the caramel, ganache with honey and topped the tart with sea salt and mini chocolate roses. The filling was divine though I wish I had seen your recipe for the shortcrust because I made mine without egg and it wasn't as soft and crumbly as I would've liked. 😢
