    I found a lamb breast today and was intrigued so I searched videos to see if it was worth buying. I looked at this in the store and I couldn't wait to buy them! I plan on using your recipe and method tomorrow. Loved the video and will be checking out a lot more of them.

    Hype musics AND lamb? Goodness guaranteed~ Don't think I've ever seen a full rack of it with this kind of cut before as opposed to the skinny racks at an even higher premium than 3 bone beef racks. You know that dog could sense the absolute tenderness on display.

    It’s nearly 11pm, and I’m watching somebody from the other side of the world cook one of my favourite cuts of meat. And yes I’m salivating!
    But I’ve never seen lamb breast with the ribs still in from any supermarket or butcher this side of the pond. I normally get lamb breast filleted, stuffed with a mint based stuffing, and then rolled up and tied. Sometimes I’ll stuff it myself with a salsa verde based stuffing. But I must admit this version could soon find itself on my “to do” list.

    I am so happy that I ran into your video on lamb breast . I needed to know how to prep the lamb. I was not sure if I was looking at fat or sinew on the slab. Now I know to score it ! and not cut as much off as I did the first slab. Thank you. Do you do mostly meats? I follow a Ketovoire lifestyle.

    Since this cut is the same as pork belly/bacon cut, I like to take the meat off the bone and roll it up like a roast and slow cook it with some herbs in the middle. Delicious.

      Just go to your grocer or meat market and ask for Lamb Breast. I also see them at Walmart except the rack has been cut to about 4 inches.

    You convinced me to try this! I have a question. Since I don't own a pellet grill, can this be cooked in my conventional oven in my kitchen? If so, would any adjustments be needed to the temperatures you cooked them at (275, 300, 325)?

      I cooked it in my own just last night, 2 hours at 275. And then 325 for about 40 minutes uncovered on a sheet pan center rack for the whole time. The balsamic and honey, I reduced it down about a 1/3rd in a saucepan first and glazed it then turned the broiler on low for 5 minutes. That did the trick. Should be worth nothing that my split lamb breast that I used was about half the size of the one's Joe cooked in his video, the package of lamb breast from walmart looking at my purchase history from curbside pickup (total price divided by price per pound) was about 3.75 pounds for both halves total without digging the packaging out of my trash, can so your time may vary. Also, my broiler runs hot, so thats why I put it on low, it was enough to give it a nice char without overdoing it.

      Yes, you absolutely can Vicky can! I would cook them at 275-300 and when they are tender, I'd glaze them and then turn the oven up. to maybe 400 for a few mins so that glaze can caramelize.

      I also didn't have the brand of Greek Seasoning he used, so I looked up the ingredients in it, and compensated accordingly. Following Joe's formatting of his wet rub, in addition to the various herbs and spices he used, named... I added 2 teaspoons of salt, 1 teaspoon of MSG, 1 teaspoon of oregano, 1 teaspoon of thyme, 1/2 teaspoon of marjoram, 1/2 teaspoon of basil, 1/4 teaspoon of ground cinnamon will get you a pretty close approximation of Cavender's All Purpose seasoning. I know MSG is scary to some people, trust me, its important, omit the marjoram and cinnamon if you want, but the MSG is important.
