    Fudgy Oreo Cookie Brownies
    INGREDIENTS
    1) 150 gms unsalted butter
    2) 300 gms caster sugar
    3) 75 gms cocoa powder
    4) 1/4 tsp salt
    5) 2 large eggs
    6) 2 tsp vanilla essence
    7) 60 gms all-purpose flour
    8) 90 gms chocolate chips
    9) 16 Oreos, whole
    10) Oreos, chopped
    Method
    1) Preheat the oven to 180 D C
    Line a 8x8-inch square baking pan with parchment paper, and set aside.
    2) Melt the butter, sugar, cocoa powder and salt in a microwave-safe bowl, and heat for 30-30 seconds until well combined.
    3) Add the eggs and vanilla, and mix well until combined. Fold in the flour and chocolate chips until well combined.
    4) Pour half of the batter into the pan, and spread out evenly. Place the whole Oreos evenly over the batter, and top with the remaining batter. Top with the chopped Oreos.
    5) Bake for 30 - 35 minutes, until a toothpick inserted comes out almost clean with a few moist crumbs.
    6) Allow to cool completely in the pan on a wire rack before cutting into squares.

    The vanilla essence that I have at home has a very strong flavour and if I add too much then i fear it will overpower the taste of brownies. Should I add only 1 teaspoon then?

      Hi Colin, it's supposed to be fudgy.. When you insert a toothpick, you should get few crumbs on it which is ok.. If its still sticky, it's not yet done. Hope this helps.

      These can't be made in the microwave, it will get burnt. You can make it on the gas.. Texture and taste will be different though. See the link...
