    On the 9th day new sourdough starter was born!
    I was asked to make sourdough starter after I made the first sourdough sandwich loaf.

    You will need:
    * Kitchen scale.
    * Boiled water, cooled and then warmed - in hot weather you don’t need to warm.
    * Unbleached bread flour, all-purpose flour, whole wheat flour and/or rye flour.
    * At least 650ml Jar.
    * Mixing measuring cup and spoon.
    ***
    * Boil water, cool & warm to around 85F/29C.
    * Use unbleached flour.
    * Tried to feed at the same time everyday - I fed once a day until the 8th day.
    * Refrigerate all the discard to make pancakes later.
    * Make notes & keep an eye on how it behaves - it’s easy to forget how many days it has been.
    * Close jars containing starter loosely & let sit in a warm place - leave room to breathe.
    * Leave in a warm place - if hot in the house you can leave at room temperature.
    * It’s ok if starter smells bad at first, unless it has mold.
    * Float test - drop 1/2 tsp of starter into a glass of cool water, and if it floats without dissolving then it is ready.
    * The 10th day I baked a sandwich loaf with the baby starter.
    * If you have any questions please leave them in the comments.
    Day 8 6am in the morning
    * 13g baby starter, 50g warm water & 50g bread flour - mix well.
    * Discard the rest of the baby starter.
    * Mark with a rubber band.
    * Close loosely (leave room to breathe) & let sit in a warm place.
    * Doubled in size.
    * A lot of bubbles & smells good - wine smell
    Day 8 June 22nd 9pm in the evening
    * 25g baby starter, 100g warm water & 100g bread flour - mix well.
    * Discard the rest of the baby starter.
    * Mark with a rubber band.
    * Close loosely (leave room to breathe) & let sit in a warm place.
    * More than doubled in size.
    * A lot of bubbles all over & smells good - wine smell.
    * I doubled ingredients - looks almost ready.
    Day 9
    June 23rd 8:30am in the morning
    * 25g baby starter, 100g warm water & 100g bread flour - mix well.
    * Discard the rest of the baby starter.
    * Mark with a rubber band.
    * Close loosely (leave room to breathe) & let sit in a warm place.
    * Starter grew more than 2.5 times in size!
    * A lot of bubbles all over & smells good - wine smell.
    June 23rd 5pm in the afternoon
    * Starter is now triple in size!
    June 23rd 7pm in the evening
    * Starter is now more than triple in size!
    June 23rd 10pm in the evening
    * Starter is ready!!!
    * Float test - drop 1/2 tsp into a glass of cool water; if it floats without dissolving then it is ready.
    * Mix 25g baby starter, 100g warm water, 75g bread flour & 25g whole wheat flour, leave at room temperature for baking the next day.
    * The rest of the starter remains in refrigeration in a jar. I have named it “Castle.”
    Day 10 June 24th in the morning
    * Baked a sandwich loaf with the baby starter.

    * 매일 사용하고 남은 애기 발효종은 냉장고에 합께 보관했다 팬케익 만들어요.
    * 매일 먹이주는 시간을 적고 상태를 관찰하면서 적으시면 좋아요 - 며칠째인지 잊을수 있어요.
    * 뚜껑을 약간 닫고 따뜻한곳에 둡니다 - 실내온도가 더우면 실내온도에 두면 되요.
    * 처음에 냄새가 안좋아도 괜찮은데 곰팡이가 생겼으면 버려야 합니다.
    * 두껑을 꼭 닫지 말고 숨쉴 구멍을 내줍니다.
    * 1/2작은술을 시원한물에 올려 풀어지지 않고 물위에 뜨면 성공한겁니다.
    * 10일째날 애기 발효종으로 샌드위빵을 구웠어요.

    * 전체가 거품이고 냄새 좋아요 - 막걸리 냄새.
    6월 23일 5pm 오후
    * 3배로 늘었어요!
    6월 23일 7pm 저녁
    * 3배 넘게 늘었어요.

    * 천연 발효종 만드는데 성공했어요!!!
    * 1/2작은술을 시원한물에 올려 풀어지지 않고 물위에 뜨면 성공한겁니다.
    * 애기 발효종 스타트 25g 따뜻한 물 100g 강력분 75 통밀가루 25g 섞어서 실내온도에 뒀다 다음날 빵 구워요.
    * 나머지 병에 남은건 이름을 “Castle” 짓고 냉장고에 둡니다 - 천연 발효종 탄생입니다!!!

      Thank you for this video. Do you use the discard for making anything? I see a lot of people use it for pancakes and such 🥰

      I kept all the discard in one jar and refrigerated until the end and made pancakes. I love sourdough pancakes! At beginning the starter smell isn’t that good. But after 5-6 days the starter smells like wine which is good sign. If you keep adding good discard toward to end the whole discard is going to be eatable.
      There are no discard starter recipes out there. In September I am going to try and make a video if it is successful. If you want to wait until then I will post as soon as I make it. They say it will take about 9-12 days. Let’s see how it goes.

      @@CastleCooking oh that would be great if you could do a video Molin. I will definitely wait for it as it’s not too long away. I’ve tried and failed with starter before and I love sourdough bread from the shop, so homemade must be better 🥰. I posted photos on the group of my brioche buns that I mentioned yesterday. They turned out fab. I honestly don’t know how I pulled it off after a disastrous start ha ha. We had them today and they were delicious 🥰

      Yes by the end of August our frequent trips to Washington and one trip to San Francisco will be over, and will stay home longer period of time. In September I can work on the starter video. 😀

      발효종을 냉장 보관하면서 필요할때 사용하고 사용한만큼 먹이 주면 되요. 사용하지 않을땐 일주일에 한번정도 먹이를 줍니다. 천연 발효종이라 건강에도 좋을거 같아요.

      꼬미주부님 매일 같은 시간에 먹이를 줘야하니 몇분밖에 안 걸리지만 신경써서 해야하고 어떤 상태인지 잘 관찰해야 되요. 그래도 실패할 경우가 많아요. 저도 이게 2번째 도전해서 성공한거예요. 첫번째 도전은 (다른 레시피) 잘 안되었어요. 한달후에 다시 도전해서 만들었는데 잘 만들어져 좋아요. 😀
