I think for the sake of this test, as it was more of a "switching to the Google Ecosystem" and didn't have any budgetary aspect to it, you should have gone for a higher end Chromebook that was more in line spec-wise to your typical daily laptop. Trying to use a >$400 Chromebook in place of your $1500+ MacBook wasn't a fair comparison.

I need to use macrium reflect, batteryinfoview, flightgear, other browsers, iTunes, and other software and you can’t and the program compatibility sucks, and windows has more software support. Windows is way more customizable and chromeos has a way worse file explorer and you have to relogon every once in a whole after you sign out which requires time and worst of all it requires wifi, so sometimes you’re quite literally locked out of your laptop. Also chrome books have horrible upgrade ability and literally the only thing you can upgraded is the wifi card. Chromeos also doesn’t allow icons on the desktop so quite literally is wasting 95% of the space on login for just a wallpaper. Literally the only thing good about chrome books is the battery life and MacBooks already do that better and with better performance. Windows is way more versatile and capable, admit it. A chrome book is just an android tablet with a keyboard. Any 150 dollar thinkpad or elitebook quickly outpaces a 150 dollar chrome book easily. And imagine naming an OS after a browser. 😂😂😂

Looking back, I know there are not many reasons to justify an over 500$ Chromebook but replacing a Macbook with a 390$ (or less) Chromebook doesn't really sit right with me.
Of course the hardware difference, not to mention the software, is going to affect the experience. Not trying to compare directly with the Macbook (because that is not really an apple-to-apple comparison), but you should have at least chosen a Chromebook with specs that is good enough so the experience would depend mostly on the software, not both.
More so if you're trying to do a lot of tasks you used to do on a Mac.

I'm one of those weirdos who's been using premium chromebook solely for work related works( I don't want an option to do anything else on it other than what I need to do to focus, and I prefer that simplicity). Good hardware does make a huge difference. When I made a switch from Pixelbook to Pixel Slate, the difference in hardware was big. I hated that flappy keyboard with weird circle shaped keys and the processor that i purchased was lacking(later they updated it but I did not get that). And when I made my switch to pixelbook go, it was all great again. Premium chromebooks do last. I still use my pixelbook from 2017 daily at home for simple stuff like browsing the web to chromecasting to pc. Your criticism on chromebooks hardware could have been fixed easily if you went for at least a pixelbook go. It's not a massive jump from your $380 chromebook. Considering your daily driver cost you $4000.

I'd say if he had gone with a decent Android tablet like the Nokia T20 with only 4GB RAM/64GB storage, he would have had a better outcome then a 4GB Chromebook for his task using Android apps, and the Google Chrome beta browser.
From my experence with ChromeOS unless you are doing really lightweight stuff 4GB is just not enough, as I have an older Lenovo Thinkcentre Tiny mini desktop attached to my 4K TV with an Intel Pentium J series CPU(got it for $40), and it only came with 4GB of RAM, and just doing some simple task at 1080p was not a good experience with ChromeOS Flex I had installed on the 256GB SATA SSD, but once I popped in an 8GB DDR3 SODIMM it really brought that little computer to life with ChromeOS Flex, and I was able to enable the use of Linux apps to do even more things.

Best part is I don't even have to wear both, nor wear it in my bad ear, to get the help it provides.
I think the main issue with this though is just jumping right in, only giving it a small timeframe. Most people in an ecosystem have been there from the start and have worked out kinks and learned how things work to get the results they want. I think not having that grace period hurt the overall review. And picking the crummiest Chromebook didn't help lol.

Granted, there were a few teething problems at the start with using Android apps, but they got themselves sorted out after a few weeks.
Most of the time, I'd have the Vivaldi browser running with a mix of Android apps and Chrome-based PWAs going on at the same time, and I've rarely had hiccups. It's probably because its processor is more optimised for Android apps despite being weak compared to the Snapdragon featured here.

YMMV, and I'm not a hardcore gamer, so that'll already put me against the majority of the channel's viewers, but as long as you don't go crazy with opening so many Chrome tabs at once, you should actually be fine with it.
I'm actually holding back my OG Duet's performance by running the Android app version of Vivaldi as my main browser, and I've actually had very little problems with it so far, even with another three Android apps running at the same time.
Office productivity: you can use the Google Productivity suite perfectly fine as web apps, and the Android apps are also serviceable. I usually use the Android apps, but will switch to the PWAs if I need a bit more functionality.
Media production: for a Photoshop alternative, Photopea is a great PWA, and if you want to do things offline, enable Linux and install GIMP. In terms of video editing, if you don't mind paying a subscription, and you have a good internet connection, WeVideo is quite good. Alternatively, try going for one of the more reputable video editors from the app store. As long as you don't have too many things going on in the background, you can put together a few 720P videos, quite possibly 1080@30 videos too.
(I'm only speculating on this as I've got a phone with a similarly weak chip set that can run Lumafusion just fine.)
The one major downside is that the OG Duet is perpetually stuck on Android 9, which means some apps (like Lumafusion) will remain out of reach until someone actually gives Lenovo a good kick up the arse. The other thing to worry about is the end of scheduled updates, but that won't be for another 3 years or so.
