Japanese Marinated Eggplant Recipe

  • This is a simple recipe for a Japanese marinated eggplant. Loaded with Asian flavor, and it gets better for everyday it stays in the cooler.
    My Japanese wife and I always make it at home. It's a great side dish to go with almost anything. Or we even eat it as the main with a bowl of rice.

    3 Chinese eggplant
    3 Tablespoon soy sauce
    3 Tablespoon mirin
    2 Tablespoon rice vinegar
    1.5 Tablespoon sugar
    1 Tablespoon sesame oil
    1 Teaspoon chopped garlic
    1 Teaspoon chopped ginger
    2 sliced green onion

    This dish is amazing. It's a staple in my kitchen now for sure. One suggestion, it needs a bit of. spice. I threw a couple chilis in there. The sweet and spicy is a good mix.

    I'm curious how long can you store it in a fridge ? Will it start a healthy fermentation process like any other pickled vegetables ?

      I never tried. Usually it would only last about 1 week maximum before we finish it. For the lacto fermentation process I'm not so sure as the oil content is pretty high

    Pourquoi devez vous les faire frire, les faire à la vapeur n’est pas mieux pour éviter trop de graisse?

      Je recommande la cuisson avec de l'huile. La vapeur donnera aucune saveur. Oui le résultat final sera meilleur pour la santé, mais nettement moins bon pour les papilles 😉

    can you confirm if its 3 tablespoon of soy sauce and three tablespoon of mirin? You got way more sauce than those portions.

      Yes it is. You can eat it warm if you want, but it's best cold after a night in the cooler to infuse

      It does so you could use 1 tablespoon or rice vinegar with ½ teaspoon sugar as a substitute for for 1 tablespoon of mirin
