I think the reason why older Bollywood movie and their style of using music is getting outdated is because, late 90's to 2010 movies were mostly based on a love story between the protagonist (there were other type of stories too, but they were few in number). But from the beginning of 2010's 'realistic' movies starts to become popular, movies dealing with various social issues, movies dealing with serious plot rather than a light hearted romance.
New age directors have a serious story to tell, so they don't know how to incorporate music or they didn't want to incorporate music in early bollywood style. Because they feared that if they add music, their movies will not be taken as a serious movie, much rather would be taken as a 'typical musical bollywood movie'... I think because of both of your interest in music, you do not think music in Bollywood movies takes away any of the story value, but overall perception of Bollywood movies in west is Bollywood movies are bunch of big elaborated set to perform dance and music. Non Indian movie watchers tend to overlook the storytelling of Bollywood movies and focus mainly on music, dance and often time reduce Bollywood music to dance/music... which a lot of the newer director/producer don't like. They don't want themselves to be pigeon hole into that category, so they chose to emphasize of the story and start using bare minimum music/performance.
As a late 90's person, I grow up watching typical bollywood movies where music and dance was a big aspect, and I saw the swift happen in early 2010's... do I like musical in bollywood? Yes. Do I understand why newer 'realistic' movies are struggling with musical numbers? Yes too.
I know my comment was messy, but I hope you got my point.

You answered your question even before you asked it. Sometimes, music doesn't add to the story, seems unnecessary and increases run time for no reason at all. Hence the lack of old school kind of bollywood music these days. Because people are tired of unnecessary additions of music that doesn't add to the progress of the story.

You touched upon a very fundamental part of how percussion works in Indian music, which is that rhythm, emotion, dance, and song never exist in a vacuum. Even on a cosmic level, music and percussion in particular is an incredibly important part of Hindu mythology in particular. Shiva carries a damaru (handheld two-headed drum) and he only plays it when it is time for him to destroy the universe and start anew, and the primordial sound "Om" IS the song of creation, which comes out as Brahma's breath when he restarts the universe to build it yet again. Sound, and song, is deeply embedded in Indian history.

In India we are slowly shying away from unique Indian film making aspects like music integration. Sure great movies are being made and lot of serious movies dont need songs, but we are hoping rest of the world likes our content more cos we are becoming more like Hollywood but in a local setting.

Jab We Met is also a great one, the romance is a lot of fun. If you want some classics, Dilwale Dulhania Le Jayenge (with Shah Rukh Khan and Kajol, the actress from this song) or Kabhi Khushi Kabhi Gham (this one is an easy crowd pleaser). If you want something more heavy in themes, I recommend Black.

I don't think that music is less Integrated nowadays, i think what has changed is needless and unnatural shoving of big musical numbers. back in the 70s, 80s and even 90s, shit movies used to be big hits just because of the songs (which doesn't happen nowadays), so a lot of attention and runtime was given to the songs, maybe thats why it feels nowadays songs are less important, but i don't think thats the case. I really think Indian movies should include songs if necessary because as you correctly said it adds to the charm of the movie and the industry

But if you want to watch a romantic movie which can make you cry I highly recommend that you should watch 'Jannat ' or ' Sanam teri kasam '. Both of them are heartfelt movie. Your mother can watch any of these movies and I can say that she will not be disappointed

9:40 and you shouldnt even try to look at current Bollywood songs. Our music industry got fcked after like 2016-2017 (because music companies started to produce only that type of music which gets views on CZcams but since after like 2016, literally everyone came on CZcams only cheap shit started to get views. - Thats why all great and amazing music producers and singers like ar rehman, kk, sonu nigam, shaan, vishal shekhar, shankar ehsaan loy, etc are just sitting at home and arent offered any songs and people like neha kakkar and Tony kakkar or guru randhawa were offered all the songs by the music companies as they get 'views' on youtube. Hence a lot of people today are very sad with current state of Bollywood music and are infact angry regarding it. Sadly the music companies (T Series especially, which is the flag bearer) didnt realise that CZcams views isnt a parameter anymore to consider like it used to be before say 2016. The movie/radio audience and youtube audience isnt the same anymore (they are overpowered by (for lack of a better word) normie people on youtube). Currently a good ar rehman song or vishal shekar song wont get any views on youtube and will literally just get around 50M views but a cheap neha kakkar or tony kakkar video will get like 200-300M views or even more. To give an analogy consider this example, I always say if cheap comedy videos like Khandeshi Comedy get billions of views on youtube (yes there're literally videos on Khandeshi Comdey youtube channel which have 1Billion + views), that doesnt mean Bollywood should also start producing such cheap comedy movies because that type of content gets 'more views on youtube'. And same is with the case of songs. Just because a particular type of song gets millions of views on youtube, that doesn't mean the movie/radio audience also want that type of songs. Again the youtube audience and the movie/radio audience isnt the same anymore, on youtube they are overpowered by the number of normies (again, for lack of a better word) (who have cheap choices basically) because now everyone is on youtube.)

I definitely like older Bollywood like 2010 and past I think it’s the charm missing. Suddenly Bollywood did kiss scenes and it’s like they added kisses to replace showing love in other ways that were more innocent or charming or sensual there were more feelings in romances when there were no kisses. I think older Bollywood had more dramatics and over acting but that was charming but now it’s seen as cringe. I think they struggle to make something original anymore with charm it’s all more action and political movies now. I don’t have a good sense of what’s in now cause I’ve stopped watching the movies for a long while but there are still some good ones that come out.

For movie suggestions, You can watch " Zindagi Na Milegi Dobara" (You will not get to live again (translation) - mostly shot in Spain and has a lot of Spanish intones), or "Barfi" (as someone suggested before), or if you prefer an Aamir Khan movie - "Dangal" (a bit serious) or "PK" (a comedic satire)

With the advent of the smart phone Indians now have direct access to western movies, which tend to not value the song and dance scenes in their movies. In fact, most westerners find it funny.
I think that some of that attitude is crossing over to parts of the Indian audiences. Luckily, that is not a universally common idea. Yet.
The dancing and singing also makes it difficult for Indian film makers to sell their movies in the west, which happens to be a very lucrative market.
