Thanks so much for again supporting the idea of using food banks to reduce food waste, that they are available for everyone and that there is no shame in going to help stretch your budget (and most of our budgets are getting tighter!) Seems like you have a great Food Pantry to go to, and I’m so glad for you and your family (and the people of your area) for having access to that. No one in this country (or any country) should go hungry. One thing we did choose to invest in (we found it at an outlet, had a small scratch in the paint, who cares) was a large freezer. This has been great because we can buy large quantities on sale, and have a place to store them long term. Another thing that has been great (and I would recommend for you or anyone) is a “food saver” vacuum sealer for thing’s you’d freeze. We would lose so many things to freezer burn, and with this appliance, it lasts for at least a year (we haven’t tried it for longer.) Husband found a broken one at the thrift store…all it needed was a replacement belt (5$) and he’s handy and knows how to do this. You can get a large amount of the storage bags at Costco for a low price. This has saved us a tremendous amount of money, and reduced our food waste so much, yay!!! So interesting to see you make cheese! I want to try this…love cheese…and it looks interesting to do!! My grandmother used to use the leftover liquid to make cornbread, breads, and or biscuits. One time I seen her use it to make our cream of wheat or our grits depending on what else she was cooking when she made that cheese she would substitute that liquid with

When you make mozzarella next time , I would suggest putting the curd part into hot water. It will become soft doing that and you will be able to stretch it and ball it better. My daughter is a cheese monger and she watched your video with me and suggested that. That's what they do at Harvest Market. Hope that helps.

When making mozzarella with my grandmother she always kept the cheese in the hottest water her hands could take (that old lady had asbestos hands, lol) and would do all the kneading and folding in the water to keep it soft while forming the balls.

I have been binge watching your videos. We unfortunately don't have alot of food banks in South Africa, but cheaper like stores. So with these ideas I can easily make a hearty meal with not too expensive products. With everything so expensive it's difficult to keep a budget and make a hearty and filling meal. Also if you need food but your food bank limits based on your income, check into mobile food banks. They typically do not do any checks for income. Hope this helps someone.
Church food give aways typically do not do checks either. I volunteer at two different church give aways.
I can go to one a month and in another town can go up to 3x/month. I try to go 2x and then the one time. I am so grateful for anything I don’t have to purchase. They know me bc I always ask for flour or sugar. I ended up getting a 3 lb pork roast bc nobody wanted to cook it 😮.

Flatbread pizza with crab. Take your flatbread. Make a white cream alfredo. Add mozzarella and parmesan cheese. Place your crab or shrimp or seafood whatever you got on top of the flatbread. And then just heat it for like 5 minutes in the oven if the seafood is already. If the seafood as raw cook your seafood till it's almost. And then added to your. After you top the flatbread pizza with your seafood or whatever you got to do put a little more sauce on it and some cheese and baked it just 45 minutes until it's hot and melted

I work full time and I utilize food banks. It’s being resourceful and it is yummy snd beneficial. I wish I would have known about it a few times years ago…..yes rent, phone, electric, insurance, car note, etc, etc

Hey there! Quick tip on freezing the bagels. Keep a drinking straw handy (yes, I use a steel one). Just before you pinch that last inch on the baggie closed, stick your straw in the corner of the bag and suck out all the extra air. I make mega-batches of muffins for my husband and freeze them. Getting (almost) all the air out helps keep ice crystals from forming so they don't have mushy spots when they thaw.
I am participating in the #threeriverschallenge this year with a focus on using up all my older items in my pantry and the things I get from the pantry. I to take things they are going to throw away and preserve what I can. I have not been in the store all week! I have cut my coffee intake by 1/3 and instead drinking all the hot tea I have an abundance off in my pantry. I am loving this challenge!

Even a soured milk can be used in a chocolate cake or pancakes! I wouldn't use sour milk if super chunky, but in a cake, it works fabulous! You got a great haul! Also, from the whey, I have made ricotta and in bread making.
I've made ricotta from milk that is close to expiration but didn't know you could use the whey. Plus, homemade ricotta is so much better than store bought.

You should! Just let it get hotter than I did with mine and it'll be stretchy. I didn't heat mine up quite long enough.
also do begel chips for the kids for dipping for the uncut ones... cut them from the inside out into small slices toast them .
I believe what's left in the pot is the whey, but what is left in your bowls is buttermilk. Could be used in pancakes or waffles. Our tribe of many has great videos making cheese.
I have a friend who works at a grocery store and he calls me when he has to get rid of veggies and breads and other thing's as well. I either can it or freeze for my chickens. It's a great way to keep it out of the landfill

My husband has been off work since November when he ended up in the hospital suddenly and I was missing a lot too even before then to my own health issues. One of my food pickups gives tons of bakery items-chocolate-muffins-breads donuts pies cakes it’s crazy! Today was insane 4 french bread-2 Italian loaf-2 everything loafs 2 huge packs burger buns & 2 huge packs hot dog buns-a fruit cobbler-apple pie-cherry pie-brownie cookie pie-husband has to take all that to work-oh wait plain bagels and blueberry bagels. I got zucchini-eggplant-a few Yukon potatoes and a ton of sweet potatoes-spaghetti squash. 1 bag chicken leg quarters-1 spiral cut ham-Perdue nuggets-hot Italian sausage-Perdue grilled chicken strips-several yummy salad kits-a big tub organic mixed salad and organic spinach-sugar snap peas-celery-2 #10 cans tomato paste-Doritos-several canned veggies-vitamin gummies and elderberry syrup 🙌🏻

I can relate to when you said step outside your comfort zone and see what you can make with food bank items. I made a sweet potato dump cake out of a can of sweet potatoes and cake mix I got from my local food bank plus some pantry items that I always have on hand, and it was awesome. Everyone keeps asking when am I going to make it again. Lol.

Hi, take your leftover whey and put it into ice cube trays. Freeze and then add several whey ice cubes to your soup stocks. Adds extra protein & doesn't change to flavor of your broth. Also add a couple whey ice cubes into your smoothies. Protein smoothies!
Those flatbreads would make good turkey rollups. Spread cream cheese then a layer of cranberry sauce and add some turkey. Roll it up and cut into pinwheels.
You could make Pizza from the flat bread for the kids. Cut them into individual sizes and let them top their own any way they want. Or it may be good to use for a Mexican type casserole in place of flour tortillas.
The bagel things are yummy, love to make sandwiches with those, English muffin pizzas!
There are two-three people in my household at dinner time a box of rice a roni pasta with a bit of meat is perfect for 2 for dinner or 3 with a side or added veggies.

My daughter makes the best dip from imitation crab meat that she serves on toasted French baguettes!
That almost looks like lavish bread. Put lunch meat and cheese, roll up using the longer side, cut into pin wheel. Can freeze the pinwheels if needed. And, of course, pizzas! Maybe using fruit to make a sugary treat…..add a mix of cream cheese, sugar, and vanilla to make it a cheese cake with fruit. Those are huge! Nice work on the cheese. You have got to show us what you come up with using that mix of food options!

I saw a video showing you can make ricotta cheese from the whey.
Supposed to bring the whey. up to 200° and add a quarter cup of vinegar or lemon juice let it set 10 minutes and drain through cheesecloth

When I lived in Hawaii for 3 years I quickly realized how much food we were wasting and did my best to lessen it. I also quit using plastic bags, when I moved back to the mainland I was mortified by the amount of bags I was given at the store.
I’m very fortunate in my life now, I wish videos like this could have exsisted 25 years ago when we could’ve used the help.

Try slicing those muffins into lengthwise cuts (like thick slices of loaf bread) and then brown them up in a pan with butter. Serve with milk. So good!

Hello Carolina! I have a suggestion for the flat bread. Make pizzas. They are delicious.
I like storing excess bags of sugar or flour in gallon ziplocks to keep bugs out
I love the everything bagels. If I find a sale I will buy them up slice them thin bake them crisp and store them for snacks and croutons. I make a queso fresco (farmers/fresh cheese) in a similar way. I use lemon or vinegar if the milk is still fresh, if soured I don't use anything and heat it up as you did. I do not use rennet but salt is needed then when heated to temp i let sit a few minutes and then pour into cheese cloth and hang for a few hours and you have queso fresco/farmers cheese. I will eat it as is add some herbs, garlic, onions, seasonings, lemon pepper yum, or what ever I want. I crumble it over anything beans, rice, tacos, it's crumbly soft easy melt cheese. You did great at making cheese for a beginner. No worries! Until next time much love💖
