For the first thing, watermelon that is covered completely, like using ash, clay, or sand is able to survive from molding. But, the it wont survive the acid reacting with the watermelon from inside. Thats why the inside looks like jelly or something although it looks okay from the outside.

You should try drying the watermelon. Store it dry and uses steam or mist to rehydrate it. Good luck and Happy New Year!
