    Thank you once again for all the fun. I make a LOT of chicken broth, as well, and for years added all kinds of vegs. Hubby finally asked me to make some PLAIN chicken stock, because when we made soup, vegs are added anyway, and he was finding the flavors overpowered the lovely chicken flavor. We loved it. I never add vegs to my chicken or beef broth anymore, and the flavors are superb! Also, if you add some water to your roasting pans and scrape the bits up, and add that to your broth, you get more great flavor. Just something to consider. Thanks again.

    I add the rinsing from my roasting pan to the stock pot. Adds flavour and a little fat for flavour and richness.

    My husband and I I used to raise about 1000 Cornish cross each summer. We had a buyer for most of them who blessed them as they were processed and carted them off. For ourselves, we raised a few with the strongest legs for about 16 weeks. They processed at about 12/13 lbs each, and I roasted them just like a turkey. I loved the flavor! They were still tender and juicy cuz they’re young.

    I suffer from autoimmune disease, and I make soup stock like you do because it really helps me to get rid of flares. I make lots and lots of homemade soups with it. Thank you for showing us how to cut the chickens up. Love your videos!

    Becky from acre homestead, puts her jars in her dishwasher to clean them, and i really love the way she does stuff. But you both do things so differently but both as nice. I love watching both of you, thanks to both of you. You're both great.

      Becky is pretty cool. Watching various homesteaders on CZcams and how they each do the same thing differently and it works is a great way to remind ourselves there's not always just one way to do something. No singular "right" way that makes all the other ways wrong. There's more than one way to be "right" and above all exploring alternatives to find what works for yourself and your household is the key to success.

    Since it is just my hubby and I, we cut up our chicken when we butcher, then put a few thighs in a shrink bag and dip in very hot water. Then we make stock with the backs, hubby likes the wings. We have little if any waste this way. When we used to bag a whole bird we couldn’t eat all of it. I love the little cabin.

    When I make broth or stock I add a couple tablespoons of white vinegar at the beginning. It cooks away so you can’t taste it in the final product, but it helps leach calcium out of the bones. This method often results in a broth that jelly’s when cool.

      @karenchaney9160. I don’t know where you live, but Tractor Supply (and maybe Rural King) carry the Cornish cross chicks. Sometimes they mark them down, too, to make room for new chicks. USA

    The solar system is a game changer for the ranch! I believe the charging station can be used in your pasture, gravel pit, forest, or anywhere else that lacks electricity! I’m thinking about canning chicken stock. I love the flavor of my stock but have no freezer space to keep it. I just haven’t taken the leap of faith yet!     that Bluetti setup is amazing! I don't know if we could have installed that (instead of what we ended up with) in our motorhome, but I'm wishing we could have. We are having problems with our system. grrr.

    Put the panels on a swivel arm attached to the cabin or near by into the ground, it’ll be easier to turn it & keep up with the sun.

    I’m really interested in the Blueetti solar stuff! I’ll be sure to use your link if I bite the bullet. I agree with the large & small mouth jars. Carrots, beans, stock, etc go into small. Tomato products go into large. So I can get my hand in it to scrub. 😊
    I have FD about 20 quarts of raspberries. Ours are everbearing- we get raspberries until the middle of September! Our son loves them, I’ll use for cobbler or bread.
    Your high tunnel is gorgeous! Tomatoes gone wild. Nothing wrong with that, in my opinion.

    About the solar: this is a really magnificent system! very well designed! top notch! everybody should invest in this! really really good job Dan! if the solar panels are standing on the ground you should take a 2by4" board and mill out line along the board FX, so the panels have a steady platform to rest on. the interconnections are inside the foldable link so therefore protecting theese and make the lifespan longer. if wall mounted you cold carpent and make a straight angle triangles with a shelf construnction and install that on the wall on the cabins and such, ready for use. with the correct sun angle for your location. if u want to do the setup more advanced you make the setup with both summer and winter sun angle for your location :D thanks Dan and co :D great job!

    I don’t know if your glass top stove would be able to handle the weight of the double canner. You could use your outdoor burner. That’s what I do just so I don’t heat up the house.

    WOW that was the biggest chicken I’ve ever seen! We thought you were cutting apart a turkey it looks so big ! Very excited about your cabin and the new solar system. By chance do you know what type of warranty it has? I’m interested in getting one or more.

    I too want to say how much I enjoy all the little mountain adventures in these videos. Such a variety of tasks and activities. I have passed on the Bluetti info to my husband. Solar power is something we are very interested in.

      I have a short cotton “mop” on a handle that I use to clean mine. That’s all I use it for. My husband’s grandmother taught me to can almost 50 years ago and she had one too.

    Good size meat chickens. I should go buy a few to piece out from a local farmer. I make stock the same way as you do. Can't get husband to let me raise anything but veg🤭
    Your joy at the first tomato is something I hope to see . I have green tomatoes but temps were high , then rain then low...crazy. Love love that high tunnel!!

    Regarding your garlic: the gloves in the stem are bulbils which you can also use for planting in autumn. But it usually takes two years till you can harvest it. It only develops one small bulb in the first year.

    Thank you for simplifying the Bluetti. Great description and so practical. I have been looking at the Bluetti brand for back up power. Every winter I loose power for up to 7 days not to mention worries about loosing power in the summer. Already have had some hour periods this summer without power. Going to have to check this out. Your chickens are huge. Are they Cornish Cross or an all purpose chicken? Thanks for a great discussion on the prep from beginning and end of the chicken. Very good video.

    I had the garlic stem-bulbs last year, too. I looked all over the internet for the cause, but my google-fu failed me and I didn't find Anything on them. They function more like scape bulbils than cloves. You can still cook with them or plant them out for next year, though.

    Yes! Fresh tomato sand. Grew up eating them and still love eating them today. Also wiping the dirt off the tomato and eating the warm fresh tomato right off the vine. Such goodness! Thank you.

    That is some fabulous looking broth! Next time I will try it your way. I have been using the rotisserie chicken I get from Sam's and using the carcasses to boil down for broth. Gives a good broth but yours looks so creamy and hearty. 😍😍

    HOW DO YOU GET ALL THE FEATHERS OFF? The chicken was amazing looking - gorgeous - I've never seen such clean meat!!! Congrats on whatever you do to get it done. I bet you have access to a chicken plucker! All those chickens done in a day - you must have a plucker! I'm so happy for you and your harvest of meat, for the sweet ducklings, for the massive work and outcome of meat and broth canned up, and finally for that beautiful bull's heart tomato - I bet the sandwich was delicious! Congrats on the power being on to the cottage, also. Seems you may have been a tiny bit busy lately - LOL.

    Looking good! Dan certainly did a great job explaining the Bluetti. Cabin looks great! I had considered them but due to the lithium based batteries and the quantity I would need, I decided against it and went with a larger conventional generator. I have heard a lot of great things about them though. Perhaps a bank of them in the shower house to run all the cabins might work. None the less, very excited for you! I don't know as the bigger pressure canners will work on your glass top or even the coil electric (my stove certainly did not stand up to a regular pressure canner). I have the same pot as you plus one bigger I use for dipping at butcher time. Good video!

    I grew up using those massive pots and outdoor propane burners for cooking lobster. Gonna broaden the uses now.

    my soft neck does those little bulbs at the base. i never forgot a hard neck.. i guess its normal .. i replant those small bulbs.

    35:23 we call that spitting Garlic, it's basically extra cloves they will grow a complete garlic head or you can eat them as is.
