We are beginning our summer during Christmas time here in sunny Qld, Australia, a time when avo’s and mango are crazy and bountiful, we always cook a huge leg of ham and have plenty leftover. Scuze my terms. Shit loads of fresh avo’s chopped like Flo did. Shit loads of fresh mango’s chopped like Flo did. 1/2 medium Spanish red onion finely diced Equal Handful of Rocket & baby spinach leaves finely diced for colour/garnish. 2 cups cooked ham chopped same size as avo & mango. Cracked pepper to taste Chuck it all in a huge salad bowl. Splash of apple vinegar, toss & taste. The mango & avo are the monopoly, everything else you add is just to bring it together. Most times we just do avo & mango only with cracked pepper, because we’re hanging out for those two ingredients, they’re really magic together. Flo I’ll be trying yours this Christmas!
Love this salad and I was given my mother in law's glass juicer from when she was a young bride in 1938. There is nothing like the old time tested tools.
I make an almost identical salad with avocado, mango and strawberries! I would never have thought of corn instead of the berries but now I can’t wait to try it! Thank you for sharing this wonderful summer treat. ❤️

I’ve never liked avocados but once a year I give them another try, because I feel like I should like them! This year I tried again and now I love them. So I’ll be fixing this salad soon.
