I've come across this also, it does beg the question, if effectively you are etching the surface of the pan everytime we clean in a strong sodium hydroxide detergent is there any increased risk of aluminium contamination on subsequent cooking?
The reaction is NOT between sodium hydroxide and aluminium. It is between aluminium and water. The sodium hydroxide simply exposes the aluminium to the water by removing the oxide layer.

I did this on accident today. Tried to use a pie pan as an evaporation dish for an hot, concentrated alkaline solution. I had used it the day prior to evaporate a cold solution of potash with no problems. I figured I was safe 🤣 I had no idea what was going on lol.
Hi, i once had a anodized bar of aluminum which had a black color tint from factory, with a sodium hydroxide and water bath solution it took about 15 minutes to release the black color and leave the aluminum color. The more time i left it on the solution the aluminum started to turn more and more WHITE . After doing that i spent several minutes with a kitchen sponge and cream with micro particules (normally used to remove stains in the toilet) to rub the surface of the aluminum for about 20 minutes, which started to release a grey paste. As i rubbed more and more i was able to get a "kind of anodized" finish. and if i kept rubbing more and more i was able to reach the more shiny aluminum finish. As cosmetics go, i never understood why for cosmetic purposes, this process left the color of aluminum more like a anodized mate look. Maybe i managed to get a nice result without using acid and electricity?
What you mention is called electropolishing but is rather difficult, the pure appearance of aluminum is not bright but opaque white as you mention, and when oxidized with the protective layer of oxide it is darkened over time, this protective layer is much more resistant than the same aluminum in many aspects.
