rice is not the main food in many province of Africa, in some it is noodles, in others, it is steam bread. But Yes, Madam knows about rice a little :)

Being French, i am surprised you live in Nigeria instead of senegal or some other african countries that speak French.
I did stay in several African country, but non of them was french speaking country.
