  • "Death Before Decaf" (← words we do not say at Red Rooster)
That's right, decaf is not the enemy. When you start with an exceptional coffee that's been meticulously processed, and then expertly decaffeinated, you still have a great cup of coffee. Period.
Colombia Decaf De Caña is a sugarcane decaf (or EA decaf), which simply means that natural ethyl acetate and spring water are combined to remove the caffeine, versus a conventional chemical solution that’s used on an industrial scale at a small number of facilities around the globe.
Sugar extracted from Colombia’s plentiful sugar cane crops are extracted and fermented to create ethyl alcohol. Acetic acid, the main component of vinegar, is added to form ethyl acetate. EA is a common compound found in fruits and vegetables. This solution gently extracts and removes caffeine while maintaining the bean's intrinsic structure.
Trust us- when that late night coffee craving strikes, you’ll thank us!
