i tried doing tempura like they did, the shells and everything intact. I out that if you batter and fry shrimp without taking the shell off, the shell tends to be not crispy but still chewable. That being said, I would fry the shrimp first, batter it up, and then fry it a second time. The shell and the batter will still keep the meat inside moist.

This place is very clean and sanitizing, other videos I've seen the cook uses same gloves to wash vegetables, meat (raw and cook) prep and touch cook chickens.
Yeah I've seen that too. The only con in this video is frying the chicken in same oil they fry the shrimp in, same time!! I don't want my fried chicken tasting like fried shrimp!

What do they use that the upper layer become so light and crispy???
Its so satisfying
If you pre coat it lightly with regular flour first than coat it with liquid batter next the skin becomes extra light and crunchy ( also it's best use a deep pan or pot with lots oil or else the chicken (meat becomes dark)
