Yeah. He knew. And Sidious actually did train maul into a Sith lord. Kind of why he’s called “Darth”. And in phantom menace he says “at last we will reveal ourselves to the Jedi. At last we shall have our revenge.” Cause before the phantom menace, sidious taught him many things about the sith, even took him to malachore v (the place in rebels) and showed him the massacre that was dealt to the sith, and even had him literally breath in the ashes of the dead sith there. He took him there twice to be exact. Sidious just portrayed him and called him an assassin to his master Plagueis so he wouldn’t know he was training an apprentice.

The latest season of clone wars has made it clear that Maul did NOT know Sidious was Palpatine while they were together, and if he knew anything about the plans it was probably just the separatist side to split off planets and wage war on the republic. I feel like that was hinted at in earlier seasons as well, and also in Rebels. He figures everything out eventually but it takes him a long time.

*Count Dooku:* The Dark Side has clouded their vision. Hundreds of senators are now under the influence of a Sith lord called Darth Sidious.
    *Obi-Wan:* I don't believe you.
Star Wars: Episode II - Attack of the Clones (2002)
Obi-Wan just didn't consider the possibility that Dooku was telling the truth. If he had the Jedi would have gone "who controls the Senate?"
The list is very short and once you consider the possibility the pieces fall into place and this time the Jedi coming to arrest Sidious are _the entire council_ since the war had only just begun.

@Devin Dalton I think Dooku was a bad guy and wanted power, but he also hated Palpatine. For 2 main reasons. 1) As Palpatine said when he killed Plageuis "no true Sith would share power" and 2) revenge for the death of Qui-gon Jinn, Dooku's former Padawan.
At the end of the Plageuis novel, Dooku tells Palpatine that he's going to go looking for the Sith Lord, even though they were responsible for Qui-Gon's death, because like Dooku the Sith wanted to change the galaxy.
But I'm sure that once he felt he'd learned all he needed to - which he probably did by then considering he believed he was going to steamroll over Yoda - he would have turned on Sidious, just as Sith Apprentices always turn on their Masters.
And that is why he tried to recruit Obi-Wan as his own apprentice. Both to honour and respect Qui-Gon by saving his apprentice from the destruction of the Jedi, and to get the help of a strong apprentice to help him overthrow Palpatine and replace him as the Sith Lord.

Yes, it is in the ROTS novelization. Jedi Spartan is directly referring to the novel.
The ROTS is one of the best of all of the Legends novels, as well as the companion “prequel” novel, “Labyrinth of Evil.” LoE details the events that led up to the invasion of Coruscant. It also provides more details and insight into Anakin’s state of mind. This is a crucial insight. The film made it seem like Anakin turned all at once. Not quite so in the novelizations.
Labyrinth of Evil ends with Anakin and Obi-Wan jumping into hyperspace for Coruscant. RoTS begins with them coming out of hyperspace above Coruscant. The two novels are actually one long story.

Maul was taught by Palpatine of the plan, Palpatine had yet to find a new apprentice or finalize the last details of it, Anakin was not yet known to him. Palpatine had a network of advisors, some of his inner circle was very aware. In the old lore there were entire councils of Sith prophets who helped advise the Emperor later in life, though none were true Sith Lords, the Inquistors and the Emperor's Hand, Eyes, etc which were force-sensitive assassins and agents used to extend the Emperor's reach were aware of Sidious, as were a few other parts of his intelligence network, but it overall was a very tightly kept secret that only was revealed when necessary or had little to no downsides.
Wilhuff Tarkin was aware of the plan to turn the Republic into the Empire for most of the war though he did not know Palpatine was a Sith Lord by the time of the Empire he was quite certain of it, not that he cared as both of their goals intertwined.
Grievous was completely unaware and only ever saw Sidious's chin, he was aware of Sidious, he was aware that Sidious was the master and the absolute leader in secret of the CIS, but he knew very little beyond that and mostly joined for the chance to kill Jedi.

It would be impossible for the Supreme Chancellor to keep his official diary and his secret Sith diary straight otherwise. He'd be constantly double booking appointments. He also needs someone to make sure that he never has to meet with the Jedi while its raining. They'd only have to see him with his hood up once and it would all be over.

Grievous respected Dooku, and killed many Jedi before Obi-Wan ended him. Although Grievous almost certainly had no idea that Sidious was Palpatine, I think it's very plausible that he knows Dooku is a Sith Lord and is Sidious's apprentice. After all, we also know that Gunray and other Separatist leaders were aware of the Sith master/apprentice dynamic and had struck a deal with Sidious. "This is getting out of hand. Now there are two of them!" "We should have never made this deal."
