Brewing an Accidental American Strong Ale | Grain to Glass

  • In this video, I show you how to brew a American Strong Ale. This video covers the recipe, the brew, the fermentation and the final tasting. Initially this was supposed to be an Imperial (Double) Red IPA, but since the brew itself was a bit shoddily thrown together, the result was darker and maltier than I had intended, muting the hops and resulting in a style change. This beer was INTENSE, with a lot of alcohol and bitterness which required a bit of aging. Regardless, it was an interesting brew, although not my best. I would change a lot about this beer and will probably try for the Imperial Red IPA at some point in the future again with the lessons learned from this beer.

    The recipe is below, your efficiency may vary:
    "Peace Through Superior Firepower"
    9.1% ABV 110 IBU
    10.5 lb 2-Row malt
    4 lb Munich
    0.75 lb Caramel 60
    0.5 lb Caramel 120
    0.5 lb Carapils
    0.1 lb Chocolate malt
    1.5 lb Table Sugar
    Single Infusion Mash at 150 for 90 min
    Water (ppm): Ca: 78, Mg: 22, Na: 65, SO4: 245, Cl: 100, HCO3: 36
    60 minute boil:
    60 min - Add 0.5 oz Simcoe (13.4% AA) and 0.5 oz Chinook (12.9% AA)
    30 min - Add 0.5 oz Simcoe (13.4%), 0.5 oz Chinook (12.9% AA), 0.5 oz Amarillo (8.9% AA)
    10 min - Add 0.5 oz Simcoe (13.4%), 0.5 oz Chinook (12.9% AA), 0.5 oz Amarillo (8.9% AA) yeast nutrient, whirlfloc
    Whirlpool 1 oz Simcoe (13.4%), 1 oz Chinook (12.9% AA), 1 oz Amarillo (8.9% AA) for 20 min at 170F
    OG: 1.078
    2 packets rehydrated US-05
    Ferment at 65-68 for 1-3 weeks, then keg and allow a brief aging period for a few weeks
    FG: 1.010

    Love the name! With it being bitter, I wonder if throwing a pinch of table salt in the glass would help cut some of that.

    Great video, as always. I appreciate the honesty and self-criticism. I'd be curious to hear how this beer changed over time if you were able to bottle-age it, whether it mellowed some, etc.

    Do you think ending up less dry would have helped the beer? Thinking about that 1.5lb of sugar...

    Awesome brewday and love to see the review on the result, really appreciate the honesty. I have to say it sounds like the kind of beer that I’d appreciate too!
    Just tried to brew my first IIPA yesterday and missed my intended SG by .010 😒 always working on improving though right!

      I'm really hoping it gets smoother over time. Over or under on the gravity? Efficiency always gets wonky with big beers for me.

    Hey man, love your content.
    Did you ever think about upgrading to a 2 vessel system with your kettle as hot water tank / boil kettle and a beverage cooler as a mash tun with your bag in it?

      Definitely been considering it! I'm just not sure if the pros outweigh the cons for buying and figuring out how to store yet another vessel.

    Interesting hearing you talk about aging. Can you age in bottles the way that you age in kegs?

      Sometimes, depending on the beer style it will have different effects. I've keg conditioned beers before as if they were one giant bottle and its been pretty similar in the long run. Sometimes that's really good for Belgian beers or hefeweizens

    Keep it up mate. I've brewed ur Chrisdropel, which I've named in beersmith. The spices doesn't shine through at the moment. Mine have awfully much clove taste, did ur also have intense clove taste, and did it decrease over aging? Skål 🍺 Keep it up, I really enjoy ur content

      Awesome! Yeah that beer needs some time. Let it sit and it will be rewarding. Clove sounds like a yeast ester to me, might have fermented that yeast a bit cool? Time heals all big beers though. Cheers!

    can we boil it with the lid covered to avoid water loss to some extent or is it necessary to leave it open? i mean i know that it will still loose some water when covered but it will be less.

      Boiling with the lid on will severely increase the production of an off flavor known as DMS - dimethyl sulfide. Tastes like corn/rotten vegetables. You can get away with leaving the lid cracked or partially open, but I dont advise closing it entirely.

      Thanks haha, I meant Chinook but it's been a few months since I looked at the recipe. Caught it after I uploaded it but I'm not about to go redo several hours of work for that.

    why do you use a muslim bag for hops?
