Kabab Karahi is a delightful dish that combines the flavors of succulent kebabs with a rich and aromatic karahi gravy. Here's a simple recipe to make it:

Ingredients :
*For Kababs:*
- 500g minced meat (beef or chicken)
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 2 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp garam masala powder
- Salt to taste
- 2 tbsp chopped coriander leaves
- Oil for frying
*For Karahi Gravy:*
- 3 tomatoes, chopped
- 2 onions, finely sliced
- 1 green chili, chopped
- 1 tbsp ginger-garlic paste
- 1/2 cup yogurt
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala powder
- Salt to taste
- Fresh coriander leaves for garnish
- Oil for cooking
Instructions:
*Making Kababs:*
1. In a mixing bowl, combine minced meat, chopped onion, green chilies, ginger-garlic paste, red chili powder, coriander powder, cumin powder, garam masala powder, salt, and chopped coriander leaves. Mix well to combine all the ingredients evenly.
2. Take small portions of the mixture and shape them into kababs of your desired size and shape.
3. Heat oil in a pan over medium heat. Once the oil is hot, shallow fry the kababs until they are golden brown and cooked through. Remove them from the pan and set aside.
*Making Karahi Gravy:*
1. In the same pan, add a little more oil if needed. Add sliced onions and sauté until they turn golden brown.
2. Add ginger-garlic paste and chopped green chili. Sauté for a couple of minutes until the raw smell disappears.
3. Add chopped tomatoes and cook until they soften and the oil starts to separate.
4. Add red chili powder, coriander powder, turmeric powder, garam masala powder, and salt. Mix well and cook for another couple of minutes.
5. Whisk the yogurt until smooth and then add it to the pan. Stir continuously to incorporate the yogurt into the gravy.
6. Once the gravy thickens and the oil separates, add the fried kababs to the pan. Gently mix them with the gravy, ensuring that the kababs are well coated.
7. Cover the pan and let it simmer for a few minutes, allowing the flavors to meld together.
8. Garnish with fresh coriander leaves before serving.
Serve hot with naan or rice. Enjoy your delicious Kabab Karahi!
