    Ingredients:
    2 to 3 lbs octopus
    3 plus cloves garlic
    1 bay leaf
    10 peppercorns
    Cork from a wine bottle
    Extra virgin olive oil
    1 juice of a lemon
    1/2 bunch parsley chopped
    Fresh cracked black pepper
    Salt to taste
    Directions;
    In a large pot filled with water, add bay leaf, peppercorns, and cork, and then start boiling.
    Add the octopus and cook for about 40 minutes or until tender. Test by piercing with a fork.
    Remove and slice each tentacle of the body and set aside.
    Chop parsley and garlic, add olive oil, and use some to coat the octopus pieces.
    Grill for a few minutes on each side until nicely charred.
    Add lemon juice to parsley, oil, and garlic. Whisk to thicken. Drizzle on a plate, add octopus and drizzle rest over it. Add salt and fresh cracked pepper.
    Buon appetito!

    I cook octopus quite often as it is my favourite dish. My favourite recipes with octopus are the Portuguese style salad and obviously THE monument of Spanish cuisine the pulpo a la Gallega so your recipe will now be in my repertoire !
    Something very important when you cook octopus is that consider that a good one third of it will ‘ disappear ‘ . I weighed them few times before and after boiling and always come to the same figure so it is to take into account for the quantity needed like if you need a kg of cooked octopus you will need a 1.5 kg one .
    Also as you said the European ones are really good especially the brand ‘ El Rey del pulpo ‘ , really top quality .

    Made it! OMG, thank you Alessandra!!!!❤❤ Never made octopus before and my husband had loved the one we tried about 6 years ago at Tarpon Springs Florida. Never again did we have it, we live in Argentina and here it is wildly expensive, but I wanted to surprise him for his birthday. I watched lots of tutorials and read many recipes, but I loved you cooking the grilled octopus, he adored it (and he's not easy to please, let me tell ya!).       Thanks for clarifying the big question: how to tenderize. I've heard of so many different methods: banging it on a big rock, beating it up with a rolling pin, but your method of just boiling the heck out of it, makes sense- and lot more sanitary. Thanks for your video.

    I made this yesterday! It was a hit….everyone loved it! Got the octopus from Whole Foods (frozen from Portugal). Cleaned except for eyes and mouth…. didn’t enjoy cutting eyes, but everything was go easy! Thanks!

    I have had loads of different meals with octopus. They usually with baby octopus. I’ve never had this size before, not even in the Mediterranean.

    People wondering about the cork! The belief is that the cork will release enzymes that settle between the octopus’ particularly long protein chains, thereby preventing clumping and guaranteeing tender meat.
    But there is a catch: corks are treated and boiled before being used to seal a bottle due for hygienic purposes. The often quoted recommendation to use a white and not a red wine cork does not change this.

    I didn’t use the cork (what does this add?) but I followed the rest of the recipe with generous amounts of oil, flat-leaf parsley, garlic and lemon.
    Fantastic! I wish I had made more.

    Like it when eating out, but now I want to do it. I learned allot from this video (seeing the hands-on steps), but what's the reason for the CORK other than tradition? Second question is if it was fork tender coming out of the boiling water, how does grilling it longer not overcook it just for the sake of a "grill flavor"? These are amateur questions, but I just want to know how not to mess it up when I try it.

      It’s actually easy. About 30 minutes boiling per pound. Hardest thing is finding octopus. I buy it in Asian supermarkets

      Leave it in the fridge overnight or in cold water for a few hours. Don’t boil it frozen.
