Buon appetito!
I cook octopus quite often as it is my favourite dish. My favourite recipes with octopus are the Portuguese style salad and obviously THE monument of Spanish cuisine the pulpo a la Gallega so your recipe will now be in my repertoire !
Something very important when you cook octopus is that consider that a good one third of it will ‘ disappear ‘ . I weighed them few times before and after boiling and always come to the same figure so it is to take into account for the quantity needed like if you need a kg of cooked octopus you will need a 1.5 kg one .
Also as you said the European ones are really good especially the brand ‘ El Rey del pulpo ‘ , really top quality .
My mom is from Naples. She came here when she was in her 20's, she's 90 now. I made this for her a few days ago...it was pure joy watching her reaction to it, she loved it.
Dear Jerry,
You just made my day. God bless your beautiful mamma napoletana.
Please do watch my zeppole video that I did in Vico Equense, Napoli (my birthday place) it’s in Neapolitan with lots of music. Thank you so much

Love octopus, Thank you for the delicious recipe!
Thank you so much! Easy and so delicious
This looks incredible. I have had this on holiday before. I have just defrosted some octopus tentacles so this is definitely being made today! So simple!
Hope you enjoy! Thank you for watching!
Excellent presentation! Thank you!
Thank you so much
Made it! OMG, thank you Alessandra!!!!❤❤ Never made octopus before and my husband had loved the one we tried about 6 years ago at Tarpon Springs Florida. Never again did we have it, we live in Argentina and here it is wildly expensive, but I wanted to surprise him for his birthday. I watched lots of tutorials and read many recipes, but I loved you cooking the grilled octopus, he adored it (and he's not easy to please, let me tell ya!). As other viewers commented the only complain was, I want more! Lol. Ale, I got hooked on many of your videos, I plan to try more recipes of yours like the almond biscotti. Keep up your charm and Italy alive!!! Love hearing your stories while you cook!! Big hugs!! ❤❤
Thank you so much! Happy birthday to your husband. 💙💕
Thanks for clarifying the big question: how to tenderize. I've heard of so many different methods: banging it on a big rock, beating it up with a rolling pin, but your method of just boiling the heck out of it, makes sense- and lot more sanitary. Thanks for your video.
i did a lazy version of this but it was tasty. For some reason I was talking to them while I ate them like they were buddies
Glad you enjoyed them and the conversation. Hope they didn’t really lol thank you so much for watching 💕
Will try this as soon as I find one of these guys

Ciao Alessandra! Sempre un bel video...
Grazie di cuore carissimo un Bob
People wondering about the cork! The belief is that the cork will release enzymes that settle between the octopus’ particularly long protein chains, thereby preventing clumping and guaranteeing tender meat.
But there is a catch: corks are treated and boiled before being used to seal a bottle due for hygienic purposes. The often quoted recommendation to use a white and not a red wine cork does not change this.
Thank you for the explanation! 💕
Ciao Alessandra 😊
Il polpo come lai preparato e ‘ buonissimo 😋 anche Sicilia si prepara cosi .
Tantissimi saluti da Chicago 🤗
Amazing recipe! I substituted the long boil for 8 minutes on high pressure in my instant-pot (sans cork).
Thank you so much
Hello. Did you do a quick pressure release or a natural one? Thanks!
Nice video and great choice for the name of your channel.
Thank you so much. The true love is watching my family and friends enjoy the food I make. Happy holidays. 💕💕💕
Absolutely delicious!
I didn’t use the cork (what does this add?) but I followed the rest of the recipe with generous amounts of oil, flat-leaf parsley, garlic and lemon.
Fantastic! I wish I had made more.
Next time…
the natural enzymes found in cork help to break down the cephalopod's tough tendons by drawing out moisture.
Thank you so so much for watching. I always regret not making enough.
💕
Like it when eating out, but now I want to do it. I learned allot from this video (seeing the hands-on steps), but what's the reason for the CORK other than tradition? Second question is if it was fork tender coming out of the boiling water, how does grilling it longer not overcook it just for the sake of a "grill flavor"? These are amateur questions, but I just want to know how not to mess it up when I try it.
hello sister. your food look so delicious, yummy
Thank you so much for watching!
Hi Alessandras my fathers family is from Naples, but I never heard him talk about this. My family loves sea food so I will be trying this recipe this weekend. Thanks, Peligrino.............

It’s actually easy. About 30 minutes boiling per pound. Hardest thing is finding octopus. I buy it in Asian supermarkets
I like your videos 👍👍👍
Thank you so much. You made my day. 💕
Looks amazing Alessandra! Question do you thaw first before boiling? If so, in fridge overnight? I love grilled octopus but have never made it and once again you’ve inspired me. ❤
Hi Meredith,
Leave it in the fridge overnight or in cold water for a few hours. Don’t boil it frozen.
Thank you so much for watching. I usually but the octopus frozen from Spain, Italy or Portugal. I find they’re the best. I make it for my brother and the complaint was it wasn’t enough. Lol
💚🤍♥️
@@alessandrasfoodislovethank you so much for the reply! I found a reputable fish market that will ship out to me in the Midwest and they have octopus from Portugal. I can’t wait to try this! I have a feeling my husband will have the same complaint as your brother, so maybe I’ll order two. 😂 Thanks again you’re the best! 🤗
