    Rather than adding in flour, toss the grated cheese with a tablespoon or so of corn starch (U.K. cornflour) beforehand, so the cheese is very lightly dusted. This will thicken & help emulsify it, reducing the chance of separation.

      Another option is just using heavy whipping cream instead of all that. Just add the cheese directly to it and there is no flower needed

    You need to add Garlic before you add the cheese. Without garlic it will not be a traditional fondue. And you can add some cream at the end to give it some more taste. Also try to add some Kirsch to it for taste. And please leave away the additional Salt. Cheese itself is very salty. Rather add some black pepper instead of Salt.
    For Dipping: Try grapes or pears. both go really well with cheese fondue

      ​@@Dima_Rose9 No, grape juice is aweful! It will ruin the fondue. Also if you use white wine, and cook it, the alcohol content will be low enough for children to be safe to eat. But if you really can't have alcohol, try alcohol free cider instead. Grape jucie is sweet and lacks acidity, so your cheese and liquids won't bind together.

    Swiss Fondue-Lover here.
    Pro Tip 1: Rub the pan before use with 1-2 Garliccloves
    Pro Tip 2: Bevor you eat the last few bites of the fondue ad one egg an stir it with the rest of the cheese
    And no, there is no substitute for the wine

    If you use starch instead of flour, you will need less and don't risk getting clumps. Kirsch is used traditionnaly In Switzerland, not wine ;) use this if you can find it (strong unsweet alcool made from cherries)

      This Recepie is just incomplete. First we add pressed garlic with the wine. Kirsch is added in additon and not instead of wine. Just for taste ;)

    Cheese Fondue is most likely my all time favorite food. Unfortunately, I don't drink (or in this case, eat) alcohol, which is too bad, because this is the easiest cheese fondue recipe I've ever come across.

      We don't recommend cream as a substitute for the wine, Gadis Monster. A better alternative would be chicken stock, Nofati. Or mix 1 tablespoon of vinegar or lemon juice with 1 cup of stock or grape juice (for sweetness).

      In Switzerland, especially in Wallis, they say that you absolutely need the wine, lots of wine, and Cherry, and more wine, in the fondue and with the fondue, did I mention the oil tanker quantity of wine and the Kirsch, because otherwise the cheese might form clumps in the stomach and lead to constipation (children drink hot tea), not sure if that's just a myth created to drink more wine. No really, barrels of wine. It's wonderful.

    The lemon works because it contains Sodium Citrate, which is a "melting salt"naturally occurring in citrus. You can buy sodium citrate online from some spice vendors and it makes the ultimate mac and cheese sauce as well silky smooth alfredo sauces that will never break..

      + Mal aika -- Late to the party, but here's my two cents' worth: I wouldn't use milk, because the two cheeses have already contributed enough dairy. Water adds nothing to the flavor profile. So as others have suggested, you might want to try white grape juice, apple juice, or even apple cider. And don't listen to tamahagane; it's YOUR fondue, you can use whatever you like. And his comparison to pepperoni pizza without the pepperoni is ludicrous; the key ingredient in fondue is CHEESE, not wine.

    Cheese fondue is a tradition in Europe not in America.
    If they had cheese fondue at restaurants like Apple Bees or Carlos O Kellys this is what they serve while you are waiting for your food. Instead of eating chips and dip, its cheese fondue. I know its good. Im already full.
    If a restaurant serves cheese fondue I hope they are serving bread bowl soup too. Maybe sub sandwiches there too?

      + Elissa Celino -- There's no need to avoid wine just because children will be eating it; the cooking process cooks out a lot of the alcohol, leaving only the flavors behind, and the small amount of alcohol left is mixed with a lot of cheese so the per-person amount of alcohol is minimal.

      Glad to have your question, Savannah Vasquez. Nutmeg is a spice, the small oval or round-shaped seed of an evergreen tree (genus Myristica) in the Spice Island of Indonesia. When the seeds are ground into a dry, very fine grain, the spice adds both flavor and aroma to baked goods making them delicately spicy. The nutmeg seeds give the most flavor if they are freshly ground on a small hand grater right when you want to use the spice.

    Seriously, all these people saying milk and vinegar, they're just trolling you trying to get you to turn a pot of milk on your stove into a curdled mess. But you can make fresh cheese that way, just not fondue.

      Sorry about that, miyubail. Did you taste the cheeses before you grated them? They might have been aged extra time, which could affect their taste. Was the flour "off" somehow? It's hard to know without being in your kitchen to watch you do the prep work.

      its an easier base to combine with cheese , used to make it all the time like that and people loved it at the restaurant i worked at. My main issue is by just adding plain flower, and not cooking it, it will taste off.

    Holy crap Im full. I just made some again. It helps if you shred the cheese. Cooks better. Ive always just chopped up the cheese and cooked it in the wine like that. Don't do it like that. It cooks better shredding the cheese.

    To me its not worth making unless you already have the cheese shredded. Alls you have to do is melt the cheese and add in whatever ingredients.
    Plus when the cheese dries up. DONT REHEAT IT. If it dries up perfectly just eat it like that. The cheese isn't good to melt again. It doesn't cook right so I wouldn't do it again. Just eat it with chips or melt new cheese.
    Melt smokey cheese in fondue so when it dries up you made your own smokey cheese you can taste. That's what I did, tasted better than what they sell at the stores ( I don't want to bash but what I made was good, I hate saying reviews like this but didn't have the machine oil taste to it).

    This is NOT a classic cheese fondue. What a joke of a recipe! Nobody in Switzerland adds salt to a fondue, there is already plenty of it in the cheese. Nobody adds lemon juice either. Nobody uses flour, corn starch is what should be used instead. Do not waste a quality wine, use the cheapest dry one you can find as it will make no difference at all. Do not use Sauvignon blanc! Where is the garlic? Also the quantities of wine/starch/cheese must be well-balanced or the fondue will be bad. Do not try this recipe if you want a real fondue.
