PULLED PORK TACOS that are perfect for summer leftovers | starring pineapple & avocado crema!

  • i don't know if there is an award for excellence in pork, butt (get it?) there should be and these tacos would get it. they use up your leftovers in the most droolworthy way and if you're not into pork i don't understand but also you can use chicken or steak. or tofu. or whatever it is that vegetarians eat. spice that protein, citrus that protein, heat that protein until it's warm.
    add some pineapple, some thinly sliced radishes, a little cilantro (or parsley if you're of the soap tasting variety). mix up that crema as chunky as you like and slap it all on a corn tortilla.
    then you eat it. simple as that. thank me later.

    RECIPE
    Pork
    juice from 1 lime (couple of T)
    juice from 1 orange (3-4 t)
    1tsp cumin
    1tsp chili powder
    1T garlic
    2T coconut aminos
    2T butter
    1T honey
    something spicy
    Salt & pepper
    Combine all ingredients, heat pork and reduce until saucy.
    Toppings and bottomings
    1C minced pineapple
    1 bunch radishes, sliced thinly
    1 tiny red onion, minced
    lime for squeezin
    cilantro
    your choice of cheese (queso fresco or cotija work well)
    yellow corn tortillas or another vessel of your choice
    Avocado crema - Combine:
    1 avo
    ¼ Greek yogurt or sour cream
    1/4C cilantro
    Salt
    Pepper
    Juice of one lime
    Jalapeno /red chili flake to taste (or other pepper)
