That elder Algerian man was a Gem and very knowledgeable about the history of his city, unfortunately he wasn't well understood and it's for this reason that I decided to translate what he was saying.
First of all he advised you to visit the mosque of "Sidi Abu madyan" who was an Islamic scholar born in Seville in Spain, then he went on saying that when he was in fifth grade (School) his English teacher asked him "why have you chosen to learn English" and he replied " Well.. I already speak Arabic and I need to travel abroad when I am older " He also said that the English language is a rich language but unfortunately he never had the chance to practice it fully and that his studies were mainly in French because that was the language available for him (meaning during French occupation)
It's important to have a good translation particularly when meeting interesting people like that gentleman otherwise one would miss I consider as important details.

Nothing of what you have been told is correct. Not even about "the man in charge of the mosque" who actually is not in charge of the mosque, he is the "imam" - which is not a first name" but means the one who conducts the prayers at the mosque and does the friday preaches. Other people "are in charge of the mosque". It is important to know who invites you at his home, right ?

I’ll give you some info in general :
😊 there is thousands of couscous types in Algeria from one town to another , The oldest known traces of couscous are found in burials of the third century BC of the time of Berber King Masinissa of numidia in the current north of Algeria in the kabylia region , one of the cradles of the culture
The culinary historian lucie bolens describes primitive pots of couscous found in the tombs dating back to the reign of Berber King Massinissa , that is between 238 and 149 BC , the numidian berber kingdom sided with the Romans to destroy Carthage so they had many trades and cultural exchanges and was particularly prosperous and was considered the granary of Rome and this is why you can find couscous in Italy and even in Latin America , the Arab conquests Adopted it and we find the remains of the first known utensils in the region of tiaret present-day Algeria where the kitchen tools dating from the 9th century that have been discovered are very similar to the main tool for cooking couscous , now you can find coucous and many other traditional Algerian foods in old recipes books from 18th century and that’s because of the French colonization , They imported food clothes jewelry to Europe and it became a trend , even kings and queens ( like queen sissi of Austria ) ordered Algerian food you’ll find titles always ending with « à l’algérienne » which translates to «the Algerian way »

On the contrary, it is the Moroccan cities that have been influenced by Tlemcen in the past. The history of Tlemcen is much older than Moroccan cities, they even designed historical monuments after 1900 to resemble the antiquities of Tlemcen dating back hundreds of years..
But in Algeria, you will notice that each region has its own architectural style

Tlemcen is the second-largest city in northwestern Algeria after Oran and is the capital of Tlemcen Province. The city has developed leather, carpet, and textile industries, which it exports through the port of Rachgoun. It had a population of 140,158, as of the 2008 census.[2]
The former capital of the Central Maghreb, the city is a mix of Berber, Arab, 'Āndalusī, Ottoman, and Western influences. From this mosaic of influences, the city derives the title of capital of Andalusian art in Algeria. Various titles are attributed to the city including "the Pearl of the Maghreb[3]", "the African Granada" and "the Medina of the West"

Best couscous to me is from south of Algeria. Exactly in Biskra, it is spicy and red there. We do not name the types of couscous maybe only Masfouf has different name because it is sweet and to be eaten in Ramadan. But in Biskra you have red couscous, white couscous and each time you can add or remove vegetables and use seasonal vegetables then the couscous name will pick up that vegetable name for example "couscous with pumpkin", "couscous with berzgala", "couscous with khorchouf". We have also couscous with milk and onions. In north they make couscous with fish and more and more. That is why the girl could not explain so easily.
