    HI! Greetings from Alexandria, Virginia. I am half lebanese and have decided to make this dish. I love it! I thank you for some of the techniques that you use to ensure the texture - water and refrigeration. It brings back memories of what my family did. We did not use spices outside of crushed pepper . My Grandmother , grew her own mint. Now then, we are American, and we used ground up round steak to make the dish, The meat came from a butcher by the name of Karem. Pure. Also, I have friends who are half Leb and they stated that the Kibbeh was made of pure Round. That is America, lamb was used as a Kabob when you could find it! We arrived in Kentucky in 1890!     I tried this at a Lebanese restaurant in Sydney, initially I was dubious about eating raw mince, but I was pleasantly surprised when I ate it, was not bad at all!
    (Thanks also for explaining that its not just normal old mince from the supermarket)

      It’s the normal minced meat from the butcher. You can use organic minced meat from the supermarket

    Not sure about this particular dish
    But all in all Lebanese food is within my top 5 of cuisines

    Aren't you supposed to make kibbe nayeh with meat that's minced freshly rather than using pre-minced meat? That's the rule to follow with steak tartare.

      Of course it's safe to eat! As she mentioned in the video, you can only go to selected butchers and you have to ask for 'Kibbeh' meat which is the fresh mince

      @@leili6143 Kibbeh comes from an uncontaminated/sterilised part of the meat that hasn't been exposed to air or surfaces for too long. If it's beef, it's probably coming from the round cut and it is kept in cold temperatures so that bacteria can't grow. It is minced by hand as well to prevent contamination. It is so fresh it is safe. So what if it's raw? This isn't your normal mince meat which is normally made up of scrap cuttings/trimmings.
      This is pure meat - it doesn't smell or taste funny. Have you never heard of steak tartare?
