If I buy without the folding option, is the handlebar still adjustable to rider arm length?
Basically yes, by tilting them frontward and backward. The splines on them are not supposed to be used for adjusting them. They are way too big.
How do I put the engine?
You just order it from AZUB and they add it there. They use the Shimano Steps motor which is assembled at the place fo the bottom bracket and the battery is underneath the seat.

Taking the trike to pieces is not "folding".
aszi88 thank you for your comment. Removing the seat makes things easier. Removing the wheels then allows the user to pack the trike much smaller which is positively commented by many.
