    #PlantBased #CrueltyFree #BeKindToAnimals #Sathvic #HandMade
    CC&PP MAKING
    Ingredients :
    (CASHEW CURD )
CASHEW SOAKED OVERNIGHT - 1 CUP
COOKED WHITE RICE- 3 CUPS (1:3 Ratio)
    JUICE OF ONE LEMON
    GREEN CHILLIES WITH STALK INTACT
    INGREDIENTS
    (Peanut Panneer)
    PEANUTS SOAKED OVERNIGHT-250GM
    DRINKING WATER 2LITRES
    GRIND
    JUICE OF 3 LEMONS
    METHOD - CC
Grind the soaked cashews and cooked rice with hot water to make a smooth dosa batter consistency. Add the lemon juice and mix well. Cut the bottom of the green chillies and insert into the curd till it touches the bottom. Cover and place in a warm place to set overnight. Thick curds are ready
    METHOD - PP
Grind the soaked peanuts adding water little by little to make a smooth paste. Use a fresh mull cloth or veshti and squeeze out the peanut milk from it. You may have to do this in two to three batches. Add the remaining water. This is thick Peanut milk. Place the milk on the stove and bring to a boil. Add the lemon juice and keep boiling. You will see the milk curdle and the paneer start to form. Remove from stove and use another fresh cloth and drain the paneer into it. wait till it cools down and squeeze the whey water out (don't throw it away you can use it to add to smoothies is fill of probiotics or you can use it for your plants). Tie up the cloth and place a heavy weight on it and leave it over night to drain completely. Next day smooth paneer is ready. As this is soft paneer you need to fry it before adding to any paneer dishes

For people asking about peanut curd is. Soak 1/2 cup of peanut for 5 hrs and then add 1.5 cups of water and grind well. Strain and squeeze the milk. Warm it in summer for 15 mins and then let it come to warm to touch level. Add green chili heads and then c) ose and leave it for 10-12 hrs. First time of prep takes sometime and will have a mild nutty flav9ur. But the next time take a s0oon of inoculum from previously made curd and make curd the conventional way with peanut milk. After 5 to six times of culturing from the six time onwards the nutty flavour will vanish. Do try
