I would prefer using cooked rotisserie chicken that I buy from grocery store but if not available I would use canned chicken or crabmeat. The better the chicken the better the taste I think. Good luck. It does look delicious and healthy!
Yep I just imagine someone sneezing on it or not washing hands properly after the toilet at the picking or packing site. Sugar cane white vinegar & water sorts everything out especially berries, kills that bacteria & microbes that mould would flourish on & so they last for ages
My friend taught me something similar 10 years ago:) just it was cottage cheese mixed with pieces of smoked or salted salmon, small pieces of lemon, spring onions, I added also a bit of small pieces of crab sticks (surimi), a bit of black pepper then mix and wrap into lettuce and bind it with spring onion..
