I am 2nd generation Czech born in US, parents in Chicago then me across the lake in SW M ichigan
I am SO glad I had exposure for so many years of Czech ways, language, customs, most of all COOKING and the baking I never got down, but I know how they're SUPPOSED to taste & be, so always have a target to reach for.
Roast pork (lots of caraway) knedlky & zelley are among those I have mastered & will enjoy as long as I can navigate the kitchen.
The hoskas vanochky, kolacky, those apricot, prune, cottage cheese, seed little dainties I can only recall with a sigh. Peach & plum dumplings I can sorta manage, use of buttered bread crumbs, the roux (which we called yeeshka), leg of lamb hyper-garlicked, so many dishes with more flavor by far than is usually produced today Nazdar!!
Hoist a Pilsner Urquel in tribute to those Czechs & their kitchen magic!!

Thank you for making this look so easy and manageable - and for taking the time to show how it's done. BTW, nice Becherovka bottle in the background :)
