Yes you can add grill chicken. Just of course cool the chicken separately and add it where you add the sausage in the recipe

Honestly it's not missing any cheese. I put 2 cups of cheese in this recipe. If you want to add additional to top it off that just preference but totally not necessary. It's delicious the way it is.

Could you switch out the bacon and replace it with shrimp? (I don't have bacon on hand, but there's always shrimp in the freezer.)

I'm sure there is a standard foundation for carbonara but this is cooking, and cooking is an art. And one can be as creative as they want. Just like a hamburger we'll put any and everything on a hamburger and still call it a hamburger. You ever seen a traditional hamburger😂 So let them come for me, they don't own the rights to what someone can do with carbonara.😂🤣
