  • When I lived in Cairo, I used to eat Meat Shawarma from a Restaurant called Abu Haidar every single week. I couldn't get enough of the succulent meat and juicy buns, and so after leaving Egypt, it's been one of the foods I crave the most. Luckily my mother in law had a great recipe for meat shawarma that is practically identical to the one from this restaurant. It's just as succulent and flavourful, and really hits the spot. Make this and I guarantee you'll be doing it on the regular.

    Ingredients:
    1kg of Beef or Lamb. Use a flavourful cut with a good amount of fat. Stewing meat works well but Ribeye, Chuck, or Beef ribs are best
    50-100g Lamb fat or dry aged beef fat (optional, but highly recommended. Double if using lean meat)
    3 Tbsp of Beef drippings or duck fat (in place of the lamb fat)
    1 Tomato
    1 Green Chilli (your preferred heat level)
    12 Soft flour buns
    Marinade:
    2 Medium Onions
    Zest of 1 Lemon
    Zest of 1 Orange
    5 Tbsp White Vinegar
    2 Tsp Salt
    1 Tsp Pepper
    1/2 Tsp Sumac
    1/2 Tsp Baharat (leave it out if you don't have it)
    Tahini sauce:
    150g Yoghurt
    100g Tahina
    100g Water
    40g Lemon Juice
    1/2 Tsp Salt
    1/2 Tsp White Pepper
    1/2 Tsp Cumin
    1/2 Tsp Chilli Powder (Optional)
    Onion and Parsley salads:
    1 Red Onion
    25g or small bunch of parsley
    1/2 Tsp Salt
    1 Tsp Sumac

      On a tertiary note, I'm first nations from Canada and I think Israel are racist, violent, oppressing terrorists.
      What happened in Oct was akin to 💩Srael kicking a dog for several generations then complaining like a spoiled child when they got bitten.
      I thought Bibi was going to keep everyone safe, not give the human animals a 1/4 day free for all?

      South Eastern Asian food is out of this world too, I’ve always said food should bring the world together. How can you be against other countries when everyone makes such amazing food? These need to be your friends, the world needs to have a word with itself!

    This looks perfect for a party I'm hosting soon! I've got a chuck roast just right for it. My favorite Latin American meat dish also uses a citrus marinade, so I'm sure yours will be delicious :)

    Thank you so much for this recipe. Although I'm Egyptian, I don't live in Cairo. the only place that did this style of shawarma in my area closed a long time ago and and it's all Syrian style shawarma restaurants now. It's been years since I ate this and I can't wait to eat it again without the 3 hours drive.😅❤❤

    Hello friend,
    I rarely ever try any dishes I learn online or even here on yt. To give you an example, I believe hummus is the sole recipe that I might have tried after following here on yt, and after discovering this recipe from you, and learning that you can include orange and lemon peel into a savory dish especially beef, really got me curious.
    After trying your dish following every step including the tahini sauce, I will tell you that I was just beyond blown away by the flavors I discovered. I generally prepare Pakistani food like their line of BBQs and briyani etc (my own recipes which I tweaked and developed in like 13-14 yrs or more of trial and error), this was one of the very few dishes that I might have ever tried after learning online and man I was completely blown away. Just can't thank you enough for sharing this and having me learn something magical. All the best!

      I had a jar of pepperoncini and I included about 10 of those as well in 1kg meat marinade, and they also made a great taste enhancement. I didn't have Arabic 7 spice, but did have Chinese 5 spice which I opened and used for the very first time after being in my cabinet for over a year (only because it also contained allspice LOL), it still generated an excellent flavor. I am now looking to buy Arabic 7 spice blend and next time I prepare your dish, I am sure it would be even better.

    Delicious! In Turkey last month visiting family; had a “Tantuni”, not sure but perhaps meat is prepared in a similar manner… may be kinda the same
    I am from west and tantuni is not authentic there but became a super popular fast food option-… as to this recipe I am going to try this! Can’t wait to find out

    This is the best sandwich I've seen in a while!! I wanted to grab it through the screen. When I saw the initial street food version I thought it would be a hassle to make, but thanks for simplifying it for home cooks. This has convinced me to try Egyptian food for the first time :)

    I cooked this recipe exactly as it is shown in the video and was so excited to try it. I love a good Shawarma and this sounded like a very original take and looked delicious. I have to say that I didn't like the taste at all. It tasted like meat cooked in onion pulp and didn't elevate into an interesting flavor profile. The smell after it is cooked is kind of funky as well so not a dish that I would make if I had guests. Definitely try first before you make it for guests or a party. I will not cook this again but the tahini sauce was great.

    by the way//I am Egyptians wife//I do this with my steak/chicken/whole chicken/all meat basically//marinade for a few days add some tahini to it if it's shawarma while cooking//I usually use the juice of a lemon or vinegar instead of the zest//and its yumminess and usually a few garlic cloves//

    For those reading, it basically tastes like a middling sloppy joe, def not traditional shawarma flavor. It's not bad and the meat turns out super tender and the tahini on top is nice but I wouldn't make again; also it's surprisingly bland. As some other people pointed out, it's way too liquidy at the end and you end up boiling the meat. Highly suggest as others did straining your onion mixture post-marinate pre-cook to get red of the excess moisture, at the end of a four hour slow cook I had soup, not stew, and it took an hour on medium-high, not ten minutes, and transferring to a large wide skillet to evaporate out the excess moisture.

    tried this recipe yesterday. followed the instructions and the ingredients to the letter, no substitutions. it was OK, i would say 60%-70% similar to abu haider. something was off/missing though. i think the advice to use more tender meat like ribeye wasn't a good call, i used the same and i found it to be missing this chewinness that the real abuhaider sandwich has. from what i know abu haider uses camel meat (la7ma gamali), i could be wrong though. PS: in the end i had to add ALOT more parsely after the initial tasing because it was waaaaay too subtle, unlike true egyptian shawerma where the parsely really stands out.

      Thanks for trying it. Interesting point on the chewiness. Like illustrated in the footage from their sandwiches it's chopped super small so I find that it doesn't really have much chewiness at all and you barely feel eat. In terms of camel meat, no clue, I doubt it though as camel meat also has a slight flavour that I've never tasted in their shawarma.

      Obviously both you have tasted the actual sandwich and are able to share notes but foe people like me who don't have access to sumac and the 7 spices what's the alternative? Specially if one could list out the 7 spice ingredients that would be very helpful thank you 😊

      @@shikhab2250 7 spice is essentially cumin, coriander, black pepper, cloves, cardamom, cinnamon and allspice. Sumac is very nice, look for it in Turkish supermarkets if you have any near you. Quite nice on all salads. If you absolutely can’t find it I would not worry about it as you will still get plenty of zing from the lemon zest and vinegar in this recipe. My advice is not to skip adding the lamb fat as it really does add a lot and go heavy on the parsley (to taste I guess) and it really makes a big difference. If you’re not sure set a little quantity of shawerma aside and test the amount of parsley that you need before adding the same ratio to the rest of the pot. Finally don’t overcook the meat, if it’s completely tender like the recipe here says the sandwich has no chewiness to it and it feels a bit too mushy/boring to eat for me.

      @@DigitalicaEG thank you thank-you thank you for such a quick response I live in india these middle eastern spices like sumac is quite difficult and at the end I just look at these amazing recipes and drool and never cook 😕 I definitely want to try this one out and will follow your instructions 🙂 and will probably use goat meat since lamb is harder to get and I stopped eating beef a while back.

    Nothing beats this shwaermaaaaaaaaaaaa i have eaten many styles this is the best and they call it doner and it`s never as yummy as this on in Egypt with onion, tomatoes and parsley its just amazing,, the other doners are dry and no tomatoes and does not have this juicy amazing taste,, to be honest to me this is the one i was raised on eating and the best !

    I just made this and it's pretty great. I used lean beef and duck fat, messed with the proportions a bit and cooked for almost 2 and a half hours. Still very good indeed.

    .. i think you should have have finished searing it like they do in the clip you showed them using their flat top from trimming it off the vertical spit..

    Appreciate sharing this recipe! I have one question for the cooking method though. Considering shawarma is cooked with fire, wouldn’t it be a better choice to cook your recipe by stir frying in a hot cast iron pan? When you use a pot like you use, doesn’t it boil it first until the meat loses all it’s juice?
