  • Spicy puff pastry.
    Dough:
    450 g plain flour
    150 g semi-coarse flour
    30 g of fresh yeast
    310 ml of milk
    100 ml water
    2 spoons of lard
    1 whole egg
    1 teaspoon of salt
    Cracker filling:
    260 g of ground crackers
    2 spoons of lard
    1 spoon of mustard
    1 spoon of ketchup
    1/2 teaspoon cayenne pepper
    2 teaspoons of salt
    1 clove of garlic
    Yeast - mix yeast, a pinch of sugar, water and 3 tablespoons of flour.
    Leave to ferment for 10 minutes.
    Stir the whole egg into the lukewarm milk.
    Salt the flour, mix smooth and coarse flour.
    Add flour, lukewarm milk, lard to the leaven.
    Knead a smooth dough for about 10 minutes.
    Cover and leave to rise for 30 minutes.
    Season crackers with ground pepper, cayenne pepper.
    Add lard, mustard, ketchup and garlic.
    Roll out the dough and spread the crackling filling.
    Fold the dough, cover for 20 minutes.
    Repeat 3 times.
    Roll out the dough to a thickness of 1.5 cm.
    Cut the grids with a knife.
    Cut out cookies.
    Covered on a baking sheet, leave to rise for 10 minutes.
    Brush the patties with egg and sprinkle with cumin.
    Bake at 200°C for 25-30 minutes.
