Why are we adjusting the left and forward distance. Is that because you’re using an ATV vs the actual tractor to mark your boundary ?

Correct, I have it on a sxs and the offset makes the system think the receiver is in the front, left corner so I can square up corners and drive the line where I sit

Nice video, but boundary's offsets have me confused with left, right and forward, backward. My GPS receiver is in the middle of the cab, I'm going counter clockwise to mark my boundary. The boundary is to the right of my vehicle. So I offset right because my boundary is to the right of the GPS receiver? Or do I offset left because my GPS receiver is to the left of my boundary I'm trying to mark? Same with forward and backward offsets.

The offset "moves" the receiver where you want it to be. In your case, u would move it to the right since you drive counterclockwise. I drive clockwise so I have a better view of where to drive so my offset is to the left.
