The tonsure represents the Crown of Thorns - nothing to do with aping ancestral hair loss! It was common to all clerics i.e. monks and seminarians and both major and minor orders of ministry. The zucchetto (aside from being a defence against the cold for tonsured clerics) became associated with denoting jurisdiction, hence black was generally worn by Abbots and various grades of prelates in various colours; black with piping for Canons/Vicar Generals, purple for bishops, scarlet for Cardinals, white for the Pope. In the 17/18/19C's it was quite common for it to be worn in the street by clerics even in civil dress, betokening their clerical status.
No a zuchetto is a traditional hat of priests and looks different from the hats the jews wear. The zuchetto is multiple sort of triangle pieces of silk i believe and comes up into a point with a sort of string there.

There are so many roman catholics who have explained the bishop's head wear all the way up to the Pope's and it's history! You didn't research well
