also what efra said about chord progressions, ethiopian music has its own scales that are unique to it so often times you'll hear sounds in ethiopian music uve never heard elsewhere.
this is more traditional singing as opposed to modern singing in our popular music. also yall saying that this is unpredictable is funny to me cause like this sounds like relatively normal to me. just like in ethiopian theatre or musical storytelling.

also i couldn't catch the lyrics too well, but it seems liek shes sining about the battle of adwa which was a legendary battle where ethiopia crushed the oncoming italian forces in one day in a place called adwa. ethhiopia is the only african country to have protected against colonization and successfully fought off a european power.
As an Ethiopian, she is an icon 😍😍😍 she is singing about the first battle in history that Ethiopians/black defeat europeans /italy in the battle of Adwa. GiGi 🥰🥰

Its about the victory of adwa which is the first battle a white man army(italy) lost to black mans army(ethiopians) during 1895. Its an anti colonization victory for all blacks around the world. She is thanking the martrys of the war, she is thanking them for making her equal to everybody.

Im no music theory expert, but I've seen an explanation video that the "music theory" that we know and being taught is the music theory of westetn music, which excludes a lot of non-western music genres and styles. This maybe explains the bizarre melodies and "accidental notes" you're hearing here, because these type of arrangements and melodies dont exist and aren't really considered beautiful or pleasant in western music standards.
I think it's the drums, not the sax. She must have perfect pitch.
