HOW TO MAKE EHO-MAKI | Lucky Derection Sushi Roll (EP 262)

- Today I’m going to be making, Eho-Maki, lucky direction sushi roll.
We eat Eho-Maki on the day of Satsubun, which means seasonal division for welcoming the beginning of spring.
We should eat whole sushi roll facing the lucky direction of the year, in silence.
It's the most unique tradition of the year.
5 EHO-MAKI Sushi Rolls
・Sushi rice
360 ml Japanese short grain rice
320 ml water
1 piece Kombu kelp
100 ml Sushi Vinegar
・Sushi Vinegar
1 ts salt
3 tbs sugar
200ml rice vinegar
1 piece Kombu kelp
・Koya Tofu
2 pieces Koya Tofu
1 cups water (480ml)
1 ts dashi powder
1 tbs sugar
1.5 tbs soy sauce
1.5 tbs Mirin
・Kampyo
20g Kampyo
・Dried Shiitake Mushroom
3 dried Shiitake Mushroom
1 cup (240ml) luke warm water
1 tbs sugar
1 tbs soy sauce
1 tbs Mirin
・Shrimp Oboro
150g boiled Shrimp
1/2 tbs sugar
1/2 tbs Sake
a pinch of salt
・Steamed Shrimp
6 shrimp
1 tbs Sake
a pinch of salt
・Cucumber
・”Anago” seawater eel
・Tamagoyaki
2 eggs
1/2 ts potato starch (or corn starch)
1 ts Mentsuyu (consentrated)
1 tbs water
Or 1 tbs dashi +1 ts soy sauce
・Nori sheet
・Thin egg omelet
1 large egg
1/2 ts potato starch (or corn starch)
1 ts water
a pinch of salt

What made me want to leave a is the statement you made near the end. Unless the mother doesn't care ( hard to believe I know but I have had friends tell me about their mother's and what they would make for or not for them) or doesn't know how to cook. What your son said was wonderful. I know the feeling. As good a cook is my wife, she will never replace my mother's cooking. And I'm sure my children will say the same thing. My wife and my mother learned to cook only after they got married.

February 2 in America is Groundhog Day, not celebrated everywhere but I live very close to the town that started it. There is a famous groundhog that is said to be able to predict whether spring will come early, based on whether he sees his shadow when he comes out of his burrow on Feb 2. If he sees his shadow, he goes back to sleep and we get 6 more weeks of winter. Thousands of people come to the tiny town where he lives to see if he sees his shadow or not. So I guess that’s our start of spring tradition! I just thought it was funny that the two events share the same day :)
