Brilliant, Rob. You are right about the taste difference, and the texture of the crumb is so satisfying. I think the way you have broken down the prep steps makes this recipe accessible for just about anyone. One note, however. In my experience it is difficult to control the seasoning in the flour dredge, so I have taken the practice of seasoning the meat (in this case chicken) directly, and then going to the flour/egg/crumb station. I have also taken to brining with salt and sugar for almost all my chicken recipes, and that has really upped the flavor. I haven't tried it on a pounded cutlet yet, so I will give it a go and let you know. Note: If you brine, you do NOT need to salt it again.

I jsut wanted to report back that I butterlied the chicken breasts, pounded them even, then brined them for about 45 minutes, then went through the dredging station. I actually made chicken parm with them instead of the Kiev (wife rules) and the seasoning was PERFECT. No added salt other than the brining. So thanks for the inspiration, Rob!

My mom made this for me growing up, and I had to call and confirm this is the one filled with bursting butter filling, at first I thought it was Chicken Cordon Bleu that had just ham and swiss cheese. This is the one I remember with the sauce thats an experience.

So I tried this and when I went to bread them I thought "no way these are not gonna leak". They seemed to come unraveled at the slightest touch and kind of looked like crusted sea urchins. I popped them in the oil as described though and BOOM - perfect round Kievs!! Thank you for this. Turned out awesome! And perfectly sealed!

Bit more complicated recipe than my one that I just cut a hole into the chicken and stuff the garlic butter inside and crumb but still, its very nice looking. :) thanks for the recipe.
Or use crushed up cornflakes or rice crispy, I've used either of those for turkey escalope and it works a treat plus a nice crunch

I missed them so much since the stores in my country don't have them and this looks perfect. I tried a different recipe, what a mighty mess and thick chicken I didn't enjoy at all. I look forward to cooking it, my partner is mad about chicken kiev, too.
