  • You will need a grinder also are used coarse grind on this pork butt. Use pork butt as you’re Meat due to the fact is 70% lean 30% fat This create a nice fat ratio your sausage/hot link.Natural hog casings are easy to work with then other locations. The only thing I wish I would’ve had it was cayenne red pepper. Please enjoy this video comment subscribe

      Hot links originate in New Orleans and in New Orleans its called hot sausage or by its French name chaurice. It’s always a fresh sausage though, not smoked...but a new thing I been seeing lately is some folks smoking it.

    If you wait to tie the end until the sausage is pushed to the end of the stuffing tube you will not have to deal with that puff of air at the beginning as you will have let it out before you tied off the end. Also your casings will be more flexible if you soak them in warm water for 20 to 30 minutes before you stuff. That hank of casings will probably do 70 to 80 pounds of sausage as one casing will do about 2.5 to 5 pounds depending on how long and the diameter.

    This was awesome it makes me want to get a meat grinder and make my own. I'm from the Lockhart TX way so I know a good sausage when I see one and this has my mouth watering.

      Home of some of the finest beef sausage in the country. I've always tried to emulate that style. Really simple flavors - salt, pepper, a little cayenne. It's the texture that's so unique. Seven years of making sausage, and I still can't quite nail it!

    I just ran across your CZcams channel that surfing and being nosey. So I checked it out. This is my second video. The first video was when you was selling your nachos and you had your uncle and your sisters on the video and you talked about. You make your own link sausages, so I had to search it. It took me a minute to find it. Your sausage recipe is great. I have another. Recipe and I use I save up the trimmings for my brisket. And I also added to the pork. And I also use deer meat when it's available.

    Looks delicious. Can you give any tips for smoking these on a propane grill with a smoker box? Also I will be using a kitchen aid grinder attachment to grind and stuff.

      Looks awesome man. I make my own sausages also , I like your method. I use an electric smoker, it works ok but you have to use wood chips for the smoke. I save dem bones for soup stock too. I have found that after stuffing your sausages and letting them air dry completely actually helps the color and the skins to adhere to the meat better. Overall your sausages came out great, something to be proud of. If you have any friends that deer hunt make them an offer to make them some sausage for some meat , I use 50% deer and 50% pork butt for some of the best sausages I have ever eaten !
