  • 中国是一个餐饮文化大国,长期以来在某一地区由于地理环境、气候物产、文化传统以及民族习俗等因素的影响,形成有一定亲缘承袭关系、菜点风味相近,知名度较高,并为部分群众喜爱的地方风味著名流派称作菜系。其中四川菜、湖南菜、山东菜、江苏菜、浙江菜、广东菜、福建菜、安徽菜享称为“八大菜系”。
    川菜系也是一个历史悠久的菜系,其发源地是古代的巴国和蜀国。据《华阳国志》记载,巴国“土植五谷,牲具六畜”,并出产鱼盐和茶蜜;蜀国则“山林泽鱼,园囿瓜果,四代节熟,靡不有焉”。当时巴国和蜀国的调味品已有卤水、岩盐、川椒、“阳朴之姜”。在战国时期墓地出土文物中,已有各种青铜器和陶器食具,川菜的萌芽可见一斑。川菜的形成大致在秦始皇统一到三国鼎立之间。
