Yes aging ng beef ay important to really bring out the taste & improve tenderness. Two types po yan either wet or dry aging. Sa ngayon mas gamit ang dry aging sa US. From 3 weeks up to 3 months. Iba process noon, controlled temperature at humidity.

Been to this business 8 years ago, started with eight brahman heifers and 2 adult bulls. Medyo meron na din sanang initial knowledge considered ko pa before as backyard lang muna.
