The stuff in a box of cake mix is just the portioned out dry ingredients that you’d have to use anyways. I prefer to make from scratch, because I tend to bake fresh fruits/ fresh fruit purées into my cakes and need to use different dry ratios to accommodate the excess moisture, but aside from the pride of putting my own special touch into each formula, a box cake mix isn’t the worst thing in the world and when running a business like making wedding cakes, the emphasis IS largely on the decoration and using box mixes is the most practical way to meet the demand. Lots of bakeries use box mix as a time saver because it is a good base and either build on it or use it because the emphasis is on something other than the cake, like the frosting or decoration. I’d have a bigger issue if a wedding cake decorator used canned frosting than a box mix 😂
Homemade frosting and fillings definitely make it. But I I've never heard of homemade fondant. It tastes crap every way I've had it. They must just roll it out and call it homemade.

Im a baker but i prefer cake decorating. I actually hate the prep part- getting all the ingredients, measuring, doing all the dishes, etc. I just like decorating. But you can make your own cake mixes! Find a recipe you like and just make big batches of the dry ingredients. When youre ready, just weigh out what you need, add the eggs/milk/oil/vanilla like a normal cake, and you're good to go.
Also her saying her cakes "never turn out right" just cant be true. Just look up basic recipes, test out a couple (just small batches), and if you find one you like you can adjust it from there. Especially with favored cakes, you can REALLY tell a difference. Add lemon juice and zest to lemon cakes instead of artificial powdered favoring, and it makes a world of difference. Same with strawberry, just reduce strawberries in a pot with some sugar and add it to vanilla cake, and it tastes like real strawberries instead of fake flavor. But starting off with boxed mixes messes up the future of your business because if you ever decide to make your own cakes, you'll have to explain the price increase.
Honestly give noticed the store-bought frosting and or fillings is the difference between a bad cake and a good cake. You still do the important part lol

It takes a lot of practice. I’ve baked and decorated TONS of cakes and cupcakes in my life and I’d say only 15% of them actually turn out decent. Don’t be afraid to make mistakes when decorating. It’s the best way to practice and learn. Plus, your mistakes will still taste delicious either way! :)

I'm not americain, and for me having frosted cake is very rare. We usually only make the cake part, so making it right, moist and flavourfull is very important. Sometimes we'll pour chocolate on top. I always though frosting was just adding some sickening overly sweet paste to a good cake, but now I'm genuinely curious to try.

I feel like this is one of the crucial points to master one thing. If you want to make delicious meals you dont need to learn how to decorate it or vice versa. You dont have to learn everything, all you need to focus your attention to one thing and youll be a master at it
Keep doing what you’re doing. Experiment on the side. Once you get a good recipe, start selling it as a “new cake.” To test audience reception to the recipe. Then, slowly phase out the old fake cakes and replace them with the “real cakes.” And eventually, you’ll feel real. Because of all the work you put into making it your own.
A lot of bakers use mix. Every grocery store is mix. A lot of bakeries use mix. Every Chain cupcake/cake shop use mix. I do mine from scratch. But I'm not big on decorating. My designs are basic and simple. People buy for a variety of reasons. At the end of the day they are buying because you do it better than themselves. Not a career ender.
You can also replace oil/butter & water for applesauce. There are a TON of substitutions when using a boxed cake mix. But making a cake from scratch is not any more difficult than making icing or fondant. 🤦🏽♀️
when it comes to event cakes, the cake itself isn't the focal point, its the decoration. that's what the majority of the charge is for. using box cake mix but making your own frosting is what a good amount of hobby/cottage bakers do, because the ingredients in the cake mix is exactly what you'll make when you mix the dry ingredients together yourself from scratch, it's just a little more fool proof. can frosting and homemade frosting is where things tend to be very noticablely different, and if you're making your own frosting then that's no different than some of the best bakeries in this world

Even i Made a vanilia lemon cake with some lemons into the french vanilla
I hate people like this you’re literally ripped people off if they want a cheap cake they can get to Walmart but they get to you so they can support you and you make the cakes in the cheapest way and lie about it baking isn’t even that hard just make sure you Measure the ingredients

Crap, bakeries get the same pillsbury mix in 25/50 pound bags. What you are doing is just good business practice. It is the decoration and art work they are paying for.

Same here. There was one time about 15 years ago I managed to successfully decorate a meme cake, I keep that photo with love and pride.
