Caesar salad, spaghetti sauce
Back in 2004, I met Rachael at a cooking expo here in Cleveland. She actually called me up to the stage while she was doing a demonstration! She was making a Thanksgiving meal, and I helped her with her gourmet version of stuffing. I was so thrilled! It is good seeing someone put her meals to the time and difficulty test. After all, on the show, all of her ingredients were measured out and arranged for her. She did try to keep in as many steps as possible to make it more real, though. Rachel Ray is the first cooking show person that made me feel seen. I measure with my hands and heart and make good food. I absolutely love her.
I chop the mushrooms really small. If you cook them too long they become chewy. They’re best cooked at a medium high temp sautéed for about 5 minutes. They will continue to cook in whatever you’re making them in also.
I've made the mushroom & kale pasta dish, but I substituted the hazelnuts for cooked bacon instead, and I've made it with spicy Italian sausage with bell peppers instead of mushrooms. With the tomatoe soup, I've never been a fan until I tried a roasted veggies & tomatoes soup. The flavor profile is better!

I very much miss Rachel Ray’s 30 minute meals. I was one of my favorite shows back in the day. Thank you for bringing it back!!! And now I’m super curious about anchovies. I don’t eat seafood in general, not for any reason other than I don’t like the taste of seafood, but if it melts away… I might have to pick up a couple cans! 💙💙💙
A tradition in my family for 85+ years is to have tomato soup and grilled cheese on Christmas Eve as it is a quick meal to have before church. I put basil and cream in my tomato soup. I’m definitely going to try these grilled cheese. Merry Christmas🎄🎅

I love these videos lol I rarely hear of anyone actually making food network stars meals so I love this content.
Try Ina’s tomato soup. It has carrots in it for sweetness, basil, etc. Has a small amount of cream in it too. I make cheesy pizza sticks to dip into the soup. On a cold day, my son will eat this for lunch and dinner. I will check recipe to see which soup and let you know. If you have any leftover you can freeze it or use it as a sauce to put on meatloaf after you brown it. Let finish cooking with sauce on it. You will not need that much of it...about 1 cup or more depending how large your meatloaf is. My mother always used stewed tomatoes to put on her meatloaf. We never had a sweet sauce on the top of it. We had rice with the tomato gravy and meatloaf. My mother was from Crowley, LA. Like a gumbo, everyone has their way of cooking...no two are the same.

I’d replace the mushroom with quality steak (so it’s not tough). They always say mushrooms can be used in place of beef to bring meatiness, so why not replace mushrooms with beef and maybe a little beef concentrate like Demi glaze and I would leave out those hazelnut all together. 😆
I replace anchovies with capers for a briney taste.

I love tomato soup. I learned so much from watching Rachel Rae and still use a lot of things I learned from watching 30 minute meals. Sounds silly (or sad) but I never roasted veggies until she did it. Now it’s the only way I make Brussels sprouts and I only tried that because I was planning her roasted broccoli and realized my husband had picked up the wrong B veggie 😂 , but we’ve never looked back. I always enjoy your family rating the dishes and you are constantly entertaining. Merry Christmas to you and your family 💕
New subscriber here. I love that as a mom, you teach your kids it’s good to try things that you don’t care for in other recipes. I also realized it was about the texture of mushrooms when they’re cooked that I don’t like. I love raw mushrooms in my salads or if cooked, in a purée when it’s in a sauce.
Every time you talk about Misen ..........I LOVE MINE! I got a pan randomly from a Kickstarter in 2018 (8" Misen Nonstick Pan) and it's become my favorite. They make some really great products! My sister and I would watch Rachel Ray after school. Although we rarely followed through and cooked any of it - sorry Mom. lol

Watching Rachel Ray was like prime time tv when she was young! We'd watch Sandra Lee & how heavy handed she was with booze & laugh & then learn to cook with Rachel! Still keep a garbage bowl (technically for compost). I think she gave everyone a boost of confidence because she was like a friend.

I went to culinary school, and we always had to try everything. (Except if allergic), and we made duxelles. Basically fancy mushroom pate sort of thing. Blecch. I gagged. Still try every few years to enjoy them. I fail each time.

Anchovies are good if you like salty fish. Just gotta watch out for the bones. I eat them out of the can sometimes. I just pick off the meat and eat it. The oil and seasoning are yummy.

Interesting fact, Worcestershire sauce is actually made with fermented anchovies! Definitely go check out how it's made, it's a very lengthy process and makes you appreciate the sauce that much more :D
I also watched Rachel years ago and have used a garbage bowl ever since and I even purchased a large frying pan with the orange handle from her and still in excellent shape years later! Now about the tomato soup.....only for recipes that call for it never to eat, totally not a fan! I do love mushrooms, especially garlic mushrooms on top of steak, yum! I loathe mushrooms and I hate tomato soup too! I've tried so many of Rachel's recipes and she just isn't a hit in our house. It's rare if we make one of hers that we actually like.

We enjoy tomatoes so much, I can vegetable soups, tomatoes and sauce in a year with a great year of tomato growth. Last year was great. This year, we had so much rain here in our area it stunted their production. I think we had a whole 2 tomatoes.🍅🍅

I was an anchovy doubter - but once I started to think of it as a funky seasoning, it all made sense! Plus they make AMAZING high value dog treats if you have extras.

For great mushroom texture, add fewer at a time to the pan. Learnt that from Julia Childe from Julie and Julia and it changed my cooking game!
Thanks for testing these out for us. I used to watch all of her shows too. Also, in case you ever try another mushroom recipe again...My trick to fix the mushroom texture issue is to chop them up really small.

I also love Rachel Ray! I can tomato soup every year and it's amazing! I'm not sure I'm a fan of the other recipes...lol. You very brave to try all you did, And I to find the older I get the less I like mushrooms because of the spongy texture. I love them raw on salads but not cooked. Can't wait to see your next cooking adventure.
That ending with "Oh Christmas Tree" --- We had a Relief Society thing where we sang it. Somehow the song played and the words typed didn't quite line up the same. Yet people tried to sing it still. At the end of it one of the 11 year olds said out loud "I'm confused!" I still laugh so hard that it's hard to explain out loud to people. I just my husband laughing and he didn't know what I was talking about. I'm not sure I'll ever hear that song without remembering that night.

Love mushrooms and anchovies! They add so much flavour to a dish. Add ⅛ tsp baking soda to an overly acidic tomato sauce or soup. It will cut the acidity without using sugar.
We did this when I did home health care. I didn't believe it until I tried it.
I always thought Worcestershire sauce had anchovies in it as one of the ingredients lol, but I’m not positive 🤨
My favorite recipe of hers is a Chicken Burrito with Mango salsa. It takes awhile to make but so worth it. I didn’t like mushrooms until my 30s and find canned fish (except tuna) too smelly/slimy to even consider cooking. Thank you for another great video. Merry Christmas to you and your family!
I cook with anchovies all the time!! I think they add a lot of flavor without adding fishiness! I use them as a base in my red sauce!
I had cream and Italian seasoning and basil to my homemade tomato soup also a couple bay leaves and let it simmer in the pot. That grilled cheese looked bomb
Anchovies are so good!! Mix them into any cream sauce, I would recommend chopping them next time. It makes things really rich. Good in red sauce too. They are sooo good for you.

The first actual dinner party I went to, the host used the spaghetti/lemon/breadcrumb recipe for the pasta course along with this huge, delicious salad. I got her recipe and used the anchovies, and now I use them for lots of pasta recipes. My kids love this recipe so much!
Also, Rachel Ray's mantra all through all her shows was that everyone should always customize these recipes to suit their tastes, but the recipes are meant to give ideas of techniques and flavor combos!

I recently found a tomato basil soup recipe that they love here. (it has the crushed red pepper for the kick!) We've been having soup Sundays for the past few months, so I've been making plenty of different soups. Some that I'll never make again! ;)

I used to work at a pizza place and we had anchovies as a topping. Very few people like them and I hated having to put them on a pizzas. They stunk! Good for you for being adventurous!

I really enjoy your videos! So much fun to watch. I believe the problem with the shrimp was too much baking soda, just a tiny pinch for that amount of shrimp. It's used to tenderize Beef, Pork etc. Try using corn starch to crisp up the shrimp, works wonderfully without leaving a weird taste behind. Thanks for making videos that brighten my day. I made tomato soup for the first time recently but I roasted the tomatoes, onion and garlic then added it to the stock and blended with bit of cream 😋

I love Rachel Ray and tomato soup! But I actually saw Giada make tomato soup with marinara as a base, and that is my go to recipe. I have adapted it to our tastes, but it’s a good and easy base recipe that I usually can make from my pantry.

As you found out you can eat small fish bones from anchovies & some other fish, anchovies are a really good source of calcium. If you liked that dish spaghetti puttanesca is gorgeous & very simple & quick to make.

I learned to use anchovy when I lived abroad... so much flavor all the good Caesar dressing uses anchovy paste!

Its absolutely fine to change up a recipe but I'm not a fan of changing up a recipe or not using the actual ingredients that it calls for and then rating it because you didn't actually follow the recpe.

Ina’s Cream of Fresh Tomato Basil Soup. I just use canned, crushed tomatoes when I am out of fresh tomatoes. Also, I use water in place of chicken broth with about 5 chicken bouillon cubes.
Love tomato soup especially when you have homemade tomato juice. I always add butter, garlic, and Italian seasoning. Looks like the first recipe is really good. Hate capers so not sure I would try the pasta thing with sardines. Although I do like sardines.
Not a fan of tomato soup myself but if you like garlic bread can I recommend spaghetti garlic bread subs? I use store-bought garlic bread, bake it and slice it halfway down the middle and take spaghetti with meat sauce and place it inside and cover it with cheese and then bake a few minutes until it's melty. It's a great way to use up leftover pasta.

Also, I do use anchovy paste in my cooking. Nice salty umami flavor.
Corelle also makes a bowl sized/shaped like that. We use them nearly exclusively and call them bowl-plates.
