I listened to and loved all 4. God I miss watching Justin cook on PBS with my late mother every Saturday.I had no idea that he made albums before I was born. Please post more albums, if you're able. You made me very happy.
Thank you "uncle" Justin for all the wonderful humor and great cooking inspiration. It is truly sad that you weren't given your rightful place in Anerican culinary history. You are truly loved and missed.
Met one of Justins' manager bout 30 years ago and told my father and I one of Justins' jokes that was never released on an album. It called THE CENSUS TAKER.This cajun was hired as a CENSUS taker so he jumps in his boat and heads down the bayou. He comes to this first house,he gets out with his briefcase and goes up to the door of the first house and knocks.A lady answers the door and he asks are you Ms. Trusclaire? She says that's right. The cajun says I come to took the Census, and she says we
out of dat.The cajun says you don't understand.Every 10 years the Federal government send me here to took the number of cajuns in you household. She says dats easy. There's me and my husband Mr. Trusclaire.Dat cajun CENSUS man says dats 2 and writes it down. The lady says ders Luke and Lucille, they twins and dat CENSUS man says dats 4 and writes it down. Then the lady says ders Jeanne and Jeanette they twins also too. Then the CENSUS man says dat make 6 and writes it down. Then the lady says ders Lou and Loretta, they twins also too and the CENSUS man says dats 8 and writes it down. Then cajun CENSUS taker says to Mrs.Trusclaire you mean to told me every time dat you and Mr.trusclaire did it ya'll had twins and the lady says hell no it was a whole lotta times we did it and we ain't had nothin.I GUARANTEE!!!!!!
