I feel like nowadays its rare to see people in any material art/ form of wrestling intentionally lock hands and throw from this position. I wonder why?

      easy !
the pollution & contamination of leg-grabbing style has proliferated and wasted stand up wrestling !!!

greco roman wrestling is a very specific rule set. You can not grab below the waist at all or do trips at all. WIth those kind of limitations, the only way left to really throw a human being to the ground is to literally pick them up and throw them.

Watch Fedor Emelianenko fights he almost never uses typical single or double leg takedowns, almost exclusively upper body takedowns as well as sometimes grabbing the back of the knee with one hand with the other hand on the upper body.

Lower skill floor to freestyle. I used greco type throws a lot even in school because of my bad and inflexible knee.
