Most of these aren't to 'replace' animals as creatures, but either to complete tasks animals couldn't do, or to 'blend in' with animals in a military setting. Nobody would go so far out of their way to kill a dragonfly in war. If you could create a dragonfly camera, nobody would waste their ammo killing every single dragonfly just in case.

If the robot chef has restricted movement (as in, it can't stab behind it), then I see no reason for it not to wield knives at whatever speed it can safely do so. I would be quite happy with such a speedy, knife wielding robot in my kitchen if this were the case.
