Making Gulab Jamun - Everyone's favourite Indian sweet!

  • Who doesn't love the soft, sweet, sticky, rose scented goodness of a Gulab Jamun! We got my niece Hazel to come in and show us how she makes her perfectly golden brown Gulabs. In doing this write up I googled the Gulab Jamun and was quiet surprised to find out that it is said to have originated in Iran (then Persia) and been introduced to India. It is now enjoyed in much of South East Asia.
    Here in South Africa it is often used as a prayer offering and also enjoyed as a sweet treat at Diwali time!
    Ingredients - to make 5 dozen Gulab Jamun
    Gulab Jamun Dough:
    3 cups flour (sifted)
    1 cup semolina
    2 flat tsp baking powder
    2 flat tsp eliachi (cardamom) powder
    2 tbs butter ghee
    385g can condensed milk
    3/4 cup water (adjust to get dough to correct consistency) - rinse out the can of the condensed milk as well
    Allow dough to rest in cling film or plastic bag for 1 to 2 hours
    Syrup:
    2 cups white sugar
    1 cup water
    1/4 cup rose water
    1 tsp lemon juice
    Desiccated coconut to dust Gulabs (optional)
    A deep pan of oil to fry Gulabs
    Can be served with a nice cup of tea. Store in an air tight container and will keep at room temperature for at least a week (they normally get eaten before then!). Can be refrigerated.

    Thank you for sharing can you please advise on how long do u keep them in the syrup...and if i like them soaked all the way what is the process ?

      If you want it soaked all the way through, then keep them longer in the syrup. You can test them and see how soaked they are before removing it from the syrup. The timing will depend on you and how much syrup want.

      Makes the gulabs softer as an end product and makes the dough easier to work with.

      The syrup coated the outside layer because I don't over soak the gulab jamun. Remember the dough is sweet from the condensed milk. If you wish for the syrup to soak through then you must leave the julabs in the syrup for a little longer before taking them out.

      Hi, we are trying to get one right and as soon as we do we will share. The dough for the jalebi needs to be fermented a little bit but we just getting the timing on that correct.

      I do not let the syrup soak through. The syrup generally coats the outer layer and if you wish for the syrup to soak through then you can leave the julabs in the syrup for a little longer. The dough is also sweetened with condensed milk.

    I have tried this recipe today and sad to say inside was hard I think it should be 2 cups of flour instead of 3 cups of flour.
    The syrup does not soak in this recipe.
    So I have to use my old recipe. Tx

    Not the best representation but a good attempt nonetheless. Best foolproof recipe is from the Indian Delights where milk is used instead of water for the dough and deep fried in a butter ghee and oil ratio of 2:1. Jumbos should be left in the syrup to soak through.

      There are many different methods of making gulaab jamun. This is just one of the methods used if u wanna get down to authenticity then Indian delight is also incorrect.. In India they never make it like we do... It's very different. U can adapt recipe to suit ur needs/ taste/and ingredients u have
