I love how Steph is arguably one of the smartest people on the theorists team but the second you put spicy food in front of her all logic goes out the window and she does things like spray perfume in her eyes.
It makes sense that ice cream is worse than just sauces on wings, because everything they've learned about thick textures that melt over the spices is applied for the opposite way, its like their tactics are being used against them.

As a Floridian, I am proud of the Key Lime Pie. By the way, to really amp it up further, Key Lime Pie on a Stick. It is a slice of pie, on a stick, frozen, dipped in chocolate. That combines multiple cures and amps up effects of the coldness of Key Lime Pie.
I mean, my grandpa who was unable to taste or smell after downing a few shots of alcohol with his nose as a bet once, he wasn't bothered by spicy food at all, even with really hot peppers he just wasn't able to feel them at all so it kinda makes sense
My Dad's German and my Mom's Mexican. My Dad literally despised spicy foods with a flaming passion until my Mom introduced him to Enchiladas, spicy tamales, chorizo, and burritos. (Yes you heard right, the man had never tasted a burrito in his life) Now, my Dad's so crazy about spicy foods, he eats Tabasco with EVERYTHING. I'm actually starting to get concerned.
It's kind of the opposite for me. I'm half-Mexican, and I cannot stand Mexican food. In fairness, you can partially blame my Mexican relatives for that. They just never go light on the cilantro - always heavy with it. The other part of the blame goes to the Mexican food options that were around us; they all tasted like they were marinated in Tabasco. Now, even when I only look at Mexican food, I get nausea. While I can still handle some hot and spicy, heat does not equate to flavor for me. Thus, I prefer anything light on hot spicing, which makes me mainly go with Mediterranean. I am trying to coax myself into eating Mexican food by trying my hand at making my own, but...let's just say that progress has not been made so far.

also depends where you get your bread, shop bought bread has allot of sugar in it for the yeast to ferment quicker making it mould instead of going stale which bakery bread doesn’t do because its left to prove for the yeast using time and temperature and doesn’t use sugar xx

I love when Steph describes what she's going through because she kinda sounds like those wildlife people when they see a venomous/dangerous animal and start explaining really fast while panting after getting ahold of the animal.
I was scared when I tried the Hot Ones 10-pack, since I had never eaten anything over ~30k scoville before. But to my surprise, I was totally fine... even with Last Dab Apollo dabbed directly onto my tongue. I just ate a slice of cucumber afterward, on the spiciest 2 sauces, and it seemed to eliminate most of the heat. But when I did the dishes afterward, the fumes got me coughing.
Another good option i think would work is passion fruit mousse which is a mixture of passion fruit pulp with a can of condensed milk and enough heavy cream to make it kind of a soft peak, wet whipped creme consistency. Passion fruit is also acidic.
My coworker challenged me to eat 5 of the blazing hot wings from Buffalo Wild Wings. I was nervous at first because of the burning sensation, and everyone says they’re really hot! But this video gave me the confidence I needed to get though it! Now that I have methods that work (that don’t involve eating or drinking anything). Thank you Team Theorist!

FYI, the reason that ice cream is so hot is that both of the sauces @25:33 use "hot pepper extract", basically pure capsaicin. I look on both of their websites, and it is listed in the ingredients.
I didn't know "hot pepper extract" referred to pure capsaicin. I was reading the ingredients list on the back of my habanero oil bottle yesterday, as I was struggling to continue eating the food that I'd just put 3 drops too many of it on, when I saw that mentioned on the bottle and was wondering what chili it was referring to. It's definitely nice that I can essentially make anything spicy without altering the flavor but man one slip of the wrist and it's over. I usually have 3 drops for every serving of rice, which is just on the cusp of too spicy once it's done building but still pleasant, but I accidentally gave myself 6 and almost died.
Everything about this Ice Cream is true. Having done Cold Sweat and Exit Wound (Yes Freezer Burn is a way better name) I can say they do not compare to the last dab at all. Sunni Ski's has this on lock and is proud to let you know it. I do recommend them highly for not just this challenge but for all the flavors that they have.

The reason why the ice cream @25:33 is so spicy is that both of those sauces use "hot pepper extract" (I looked on both of their websites), basically just adding pure capsaicin. At least Hot Ones still draws the line by using peppers from Ed Currie of Puckerbutt, the Apollo and Pepper X, and not using sauces with exacts for the hottest sauces.
I have a feeling the reason the keylime pie worked so well, is because it uses sweetened condensed milk in the actual filling. The constanty of the condensed milk coats the tongue so much better than regular milk.

If I were on Hot Ones, the “antidote” I would bring would be a bottle of hot sauce. Then I would drink it all right there and then just to mess with Sean.
I kind of figured that the nose plugs would work really well. My family and I noticed that when we had COVID and lost our taste and smell we had practically superhuman level spice tolerances lol. We normally love spicy food as it is but once we realize that it stopped burning all together we started testing and trying hotter and higher items to see if we can taste it and we could not.

I think one Food Theory idea that could connect with a lot of people, maybe parents especially: What causes people to be picky eaters, and what are the best ways for those kinds of people to overcome that limitation to their palettes?
Some of it is definitely based in neurodivergence (causes people to be literally sick from certain textures), undetected allergies, and I imagine the rest is mostly fear of the unknown + comfort of the familiar, or at least it was for me. Anything that had an odd smell, appearance, texture, or taste immediately made me anxious about even trying it, even if I figured I might like it by one or multiple other compounds. Main things that helped were, as long as it was on my own terms, trying combination foods without knowing what was in them, like sauces with mayo or sandwiches with an unfamiliar meat, or trying it little by little and getting used to it almost as a snack like snack pickles and restaurant appetizers (takes the pressure off of 'who's going to eat this if it makes me gag).
In my neuropsychology class, we discussed that habituation (repeatedly encountering a food) is one of the best ways for picky eaters to overcome their distaste for it. Now, you don't want to give a kid a plate full of broccoli because then you may get super stressed, but having one bite once a week for 10 weeks is usually enough to get used to it and then you can start to incorporate it more into one's diet. So, that's one method
I'm glad they took the nose plugs off to see if/how the fire grows. I would like to have seen them put the nose plugs back on and see if it helps after the fact, or if the nose plug needs to be on before eating the spicy

I still found it hard to believe that holding your nose would cancel the effects of the spice but today, as my sister's friend bought spicy chicken wings I decided to try it myself, I who has zero spice tolerance. And it worked PERFECTLY. I was shocked to say the least 😅
im guessing it's the classic answer. Your brain just cant receive any info about the food, not even the spiciness so those receptors aren't being activated or they simply are being ignored by the brain because it thinks we aren't eating something spicy but something dull
The same seems to hold true for highly pungent foods -- for example, authentic sweet & sour Chinese foods are so strong that, if you try to inhale while eating them, the intense flavor & odor will trigger a choke/gag reflex.
I love how these episodes show that matpat is an actual human with those little thing like sometimes changing mind mid sentence and saying something else after a little "lag". I crave more unscripted theory.
It might be that since like with the thickness an blanket like effect of the pie for helping to tamp out the heat normally, since the cold sweat is basically that yet pumped full of that compound it lingers coating your mouth. Add in that the ice-cream melts it washes that compound around your mouth as well as you eat it.

A way to further optimize the key lime pie would be to freeze it. That is actually how it is served in the Florida Keys according to my husband, who is from Florida. I have had it that way myself too, and surprisingly it is still easy to eat with a fork or spoon at a normal freezer temperature because of it's consistency. Just like last year, I am saying VANILLA. Chemically pure vanilla extract. Chemically it is very similar to capsaicin and if used to higher concentrations can replace the capsaicin connection to the receptors on your tongue. A high concentrate vanilla milkshake compared to a chocolate one should show you the difference since I wouldn't recommend just drinking extract.

Is anyone else surprised that they haven’t tried sour cream? I’ve used it before for ghost peppers and it completely neutralizes the heat. It also fits the dairy and acid categories. You have to keep eating it tho otherwise the heat comes back after 10-15 seconds.
Sour cream is delicious and I would like more in my diet. I eat it with basically whenever I make something spicy. It works well, never considered until you mentioned. The calories though...

I would guess that it's probably on their list to try amongst the various potato chip dips and salad dressings. Food theory suggestion: What is the most effective way to keep a loaf of bread fresh after you've opened it? We have twist ties, clips, wraps, breadboxes, what is the thing that'll keep it from going stale and getting moldy the longest?

also depends where you get your bread, shop bought bread has allot of sugar in it for the yeast to ferment quicker making it mould instead of going stale which bakery bread doesn’t do because its left to prove for the yeast using time and temperature and doesn’t use sugar xx

I was scared when I tried the Hot Ones 10-pack, since I had never eaten anything over ~30k scoville before. But to my surprise, I was totally fine... even with Last Dab Apollo dabbed directly onto my tongue. I just ate a slice of cucumber afterward, on the spiciest 2 sauces, and it seemed to eliminate most of the heat. But when I did the dishes afterward, the fumes got me coughing.
Another good option i think would work is passion fruit mousse which is a mixture of passion fruit pulp with a can of condensed milk and enough heavy cream to make it kind of a soft peak, wet whipped creme consistency. Passion fruit is also acidic.
My coworker challenged me to eat 5 of the blazing hot wings from Buffalo Wild Wings. I was nervous at first because of the burning sensation, and everyone says they’re really hot! But this video gave me the confidence I needed to get though it! Now that I have methods that work (that don’t involve eating or drinking anything). Thank you Team Theorist!

FYI, the reason that ice cream is so hot is that both of the sauces @25:33 use "hot pepper extract", basically pure capsaicin. I look on both of their websites, and it is listed in the ingredients.
I was going to mention that, as well as that the ice cream is probably coating your throat with the evil extracts.

I didn't know "hot pepper extract" referred to pure capsaicin. I was reading the ingredients list on the back of my habanero oil bottle yesterday, as I was struggling to continue eating the food that I'd just put 3 drops too many of it on, when I saw that mentioned on the bottle and was wondering what chili it was referring to. It's definitely nice that I can essentially make anything spicy without altering the flavor but man one slip of the wrist and it's over. I usually have 3 drops for every serving of rice, which is just on the cusp of too spicy once it's done building but still pleasant, but I accidentally gave myself 6 and almost died.
Everything about this Ice Cream is true. Having done Cold Sweat and Exit Wound (Yes Freezer Burn is a way better name) I can say they do not compare to the last dab at all. Sunni Ski's has this on lock and is proud to let you know it. I do recommend them highly for not just this challenge but for all the flavors that they have.

We saw this episode and decided to try the key lime pie thing... it does in fact work! Thanks guys! we like spicy food to an extent. That korean 2x spicy ramen has a great flavor but its slightly too hot for half of my household, this helped them out.
Lime pie actually has another bonus and that's temperature. You can put the pie in the fridge and that would also help with the spice.

The reason why the ice cream @25:33 is so spicy is that both of those sauces use "hot pepper extract" (I looked on both of their websites), basically just adding pure capsaicin. At least Hot Ones still draws the line by using peppers from Ed Currie of Puckerbutt, the Apollo and Pepper X, and not using sauces with exacts for the hottest sauces.

I have a feeling the reason the keylime pie worked so well, is because it uses sweetened condensed milk in the actual filling. The constanty of the condensed milk coats the tongue so much better than regular milk.

I kind of figured that the nose plugs would work really well. My family and I noticed that when we had COVID and lost our taste and smell we had practically superhuman level spice tolerances lol. We normally love spicy food as it is but once we realize that it stopped burning all together we started testing and trying hotter and higher items to see if we can taste it and we could not.

I think one Food Theory idea that could connect with a lot of people, maybe parents especially: What causes people to be picky eaters, and what are the best ways for those kinds of people to overcome that limitation to their palettes?
This is a GREAT idea
Having the money to decide what you will and won't eat is probably a factor.
Some of it is definitely based in neurodivergence (causes people to be literally sick from certain textures), undetected allergies, and I imagine the rest is mostly fear of the unknown + comfort of the familiar, or at least it was for me. Anything that had an odd smell, appearance, texture, or taste immediately made me anxious about even trying it, even if I figured I might like it by one or multiple other compounds.
Main things that helped were, as long as it was on my own terms, trying combination foods without knowing what was in them, like sauces with mayo or sandwiches with an unfamiliar meat, or trying it little by little and getting used to it almost as a snack like snack pickles and restaurant appetizers (takes the pressure off of 'who's going to eat this if it makes me gag).

In my neuropsychology class, we discussed that habituation (repeatedly encountering a food) is one of the best ways for picky eaters to overcome their distaste for it. Now, you don't want to give a kid a plate full of broccoli because then you may get super stressed, but having one bite once a week for 10 weeks is usually enough to get used to it and then you can start to incorporate it more into one's diet. So, that's one method
I'm glad they took the nose plugs off to see if/how the fire grows. I would like to have seen them put the nose plugs back on and see if it helps after the fact, or if the nose plug needs to be on before eating the spicy

I still found it hard to believe that holding your nose would cancel the effects of the spice but today, as my sister's friend bought spicy chicken wings I decided to try it myself, I who has zero spice tolerance. And it worked PERFECTLY. I was shocked to say the least 😅
im guessing it's the classic answer. Your brain just cant receive any info about the food, not even the spiciness so those receptors aren't being activated or they simply are being ignored by the brain because it thinks we aren't eating something spicy but something dull
The same seems to hold true for highly pungent foods -- for example, authentic sweet & sour Chinese foods are so strong that, if you try to inhale while eating them, the intense flavor & odor will trigger a choke/gag reflex.

I was literally thinking about how jarring the cuts between VO Matpat and in-person Matpat are, it almost feels like 2 different people.
It might be that since like with the thickness an blanket like effect of the pie for helping to tamp out the heat normally, since the cold sweat is basically that yet pumped full of that compound it lingers coating your mouth. Add in that the ice-cream melts it washes that compound around your mouth as well as you eat it.

A way to further optimize the key lime pie would be to freeze it. That is actually how it is served in the Florida Keys according to my husband, who is from Florida. I have had it that way myself too, and surprisingly it is still easy to eat with a fork or spoon at a normal freezer temperature because of it's consistency. Looking forward to The Spicening next year!

Just like last year, I am saying VANILLA. Chemically pure vanilla extract. Chemically it is very similar to capsaicin and if used to higher concentrations can replace the capsaicin connection to the receptors on your tongue.
A high concentrate vanilla milkshake compared to a chocolate one should show you the difference since I wouldn't recommend just drinking extract.

Is anyone else surprised that they haven’t tried sour cream? I’ve used it before for ghost peppers and it completely neutralizes the heat. It also fits the dairy and acid categories. You have to keep eating it tho otherwise the heat comes back after 10-15 seconds.
Sour cream is delicious and I would like more in my diet. I eat it with basically whenever I make something spicy. It works well, never considered until you mentioned.
