Regarding the Ijiraq not changing when you had three in the deck. I think the two flips show that its copying an Ijiraq (flip one) that was copying another Ijiraq(flip 2). So I think the mechanics are technically working
i think as you draw the ijiraq, it copies another one in the deck and impersonates it. then, when you play it, it comes down as the fake ijiraq because thats what it was in your hand, then "reveals" its self as the same fake ijiraq because the flip has to happen when you play one (flip 1), then flips again to reveal the real ijiraq (flip 1).
5:25 also, it works the same with the curious egg sigil. if you've already hatched a hydra, yet still drew a curious egg that doesn't hatch; its ijiraq.
My guess on the Ijiraq being visable in your hand is because they're disgusing as the other Ijiraq. Sort of like when Bryan Cranston wore that Walter White mask

So, how I think the Ijiraq only card draw works: when it's drawn it looks at your deck to see what cards it can copy. presumably, until Ijiraq is drawn, its actually just its true form, and as such, that's what the first drawn Ijiraq copies. Of course, the same thing happens with the second Ijiraq. The third one, as you've stated before becomes a squirrel. the reason for this I believe is just that a squirrel is the placeholder whenever an effect like Ijiraq needs something else to copy, even though there is nothing to copy from. So, secondly about the double flip when Ijiraq is played while disguised as another Ijiraq. As you've said, if Ijiraq copies a card that has a 'when played' effect, that effect will still go off. My guess is that Ijiraq actually has two abilities. the first obviously is it's ability to disguise itself as another card. the second however is the ability to transform into the card "Ijiraq" when it is played. however, This ability has the additional effect of being added to the card it copied . because other when played effects would otherwise be canceled, this effect always comes after any others, and because it would otherwise transform into itself endlessly, it probably also removes the ability from the Ijiraq it transforms into when the ability goes off. Now that that's clear, when an Ijiraq disguised Ijiraq is played, the following happens: 1. The copied Ijiraq has the ability to transform itself into the card "Ijiraq" normally this effect is applied to the card it copied, but because it is itself a copy, and came into play because of that, there is no card it transforms from, making it just transform itself into... If you have the Squirrel Fish challenge enabled, does Ijiraq disguise itself as a regular squirrel or as an aquasquirrel. Also I think at 3:23 the first 2 Ijiraqs were disguising as eachother

theres another softlock where if you beat the final boss and quit out, you come back to a 'map 5' which is just a blank screen and are forced to quit the run and it will say 4 bosses defeated . i got this and was so confused.

In alienrock's playthrough he went to the myco with no duplicate and the myco gave him another ijiraq, so it is possible to get duplicates of this card.(although i don't know if this is patched)

If a disguised ijiraq is being buffed by a meal worm does the ijiraq keeps the buff? Also I like it how players learn about ijiraq more and more just like its a real creature. I think that there is a way to get another Ijiraq without messing with the game code. If you go to the mycologiste without any duplicate and with an Ijiraq, there is a chance that they give a non-disguise Ijiraq. Maybe it has been patched, i have no idea. I saw that on Aliensrock chanel, in his playthroug of Inscriptyon, in the Ijiraq video.
I'd love to know if you've run into this. Ijiraq copied a Corpse Maggot and when it got played from my hand thank to Corpse Eater it never flipped over and just stayed Corpse Maggot. Perhaps I was mistaken, but I'd love to know if you've seen this.
heres a question: adding the flegeling sigil to child 13 makes it a child 14. but if u sak child 13 13 times it becomes a hungry child: so if u sak a child 14 13 times what will happen?
Fortunately, no. 5th turn in, Starvation will gain Airborne, and even if your Ijiraqs also have the anti-airborne sigil, 9th turn in, the game starts adding teeth to Leshy's side of the scale. Only way to truly have a stalemate is have 4 cards with the Repulsive sigil and Mighty Leap sigil, then one with Airborne and deals one damage. Then you'll be doing one damage every turn, and one tooth is added against you every turn, therefore you're in a true stalemate. Unfortunately it is impossible to achieve this without save editing.

And you can give the ijiraq a sigil with a totem that affects the card it copied. Some fun ones are the mole and unkillable sigils
