Hey Max. I recommend "Beef Tapa" flavor. It's a common Filipino breakfast. Beef is marinated in soy sauce, garlic, black pepper, brown sugar, and calamansi (Philippine lime). It's sweet, salty, savory, and tangy at the same time. 😊

Thai inspired jerky. My sister-in-law is Thai and I used her most common savory ingredients and garlic and green onion. Made it all the time when I was a butcher. Any scrap that wasn't ground was jerky-ed.

One of my favorite flavor profiles that I think would be amazing for jerky is a coffee black pepper. Think coffee, black pepper, paprika, garlic, chili pepper, dehydrated mushroom, cocao powder, a little cane sugar, onion etc.
It's unbelievable with steak.

I think flavors from a traditional Birria would be awesome in a jerky. 2 or 3 different kinds of chiles for smoky spice, plus the cumin and herbs would all come through really well. Most of the ingredients are pretty inexpensive and good for large scale batches.
For the jerky question;
I think a sassafras flavor (the same root used in root beer) used for an intensely sweet and savory jerky would be an amazing pick, especially mixed with some kind of heat.
So I propose Sassafras Shishito Jerky, both for the catchy name and for the unique taste it would bring.

Honestly... I really just wanna see someone make a jerk style jerky. Like... it's in the name! I mean typically jerk chicken is the go-to but a jerk beef jerky might be interesting too. Just gotta make sure you use the right wood and seasonings to get that flavor. I think you'd make it legendary!

i'm surprised how you left the sous vide one for 24h and it wasn't completely over cooked, everything looked great, you should get a sujihiki knife to slice the beef, easier and way cooler lol
A blueberry-scotch bonnet jerky would be insane. Especially if it was a lamb jerky. The natural sweetness of the blueberries and the lamb or a high quality beef and would pair amazingly with the fruity sweetness and heat of a scotch bonnet. Another one would be a straight up general tso's chicken jerky. Simple but super palatable to everyone. But using blood orange and adding szechuan pepper for a little numbness and a pleasant surpise 🤘

Bulgogi (Beef of course)
Honey Gochujang (Beef or chicken)
Salt + Pepper + Sesame oil (Pork)
Wasabi Soy Ginger (Salmon maybe?)
Carolina Mustard BBQ (Carolina Gold)
We have a Korean style rib where we cover pork ribs with aged (sour) kimchi and make sure to put plenty of the brine in the roast pan. The pork juices does some amazing stuff to the flavor of the kimchi and the kimchi works some magic to the pork. I'd love to see someone pull that off with jerky, but it may be difficult for the cost of production.

For jerky flavors, 2 things came to mind. First could be a chicken teriyaki style flavour, since it’s savory/sweet. Then, I thought that maybe a jerky made with a Mexican/latin american flavour would also taste good.

Not exactly a flavor reccomendation but I think you should try making crispy jerky/ beef chips, as I love the crunch combined with how it melts in your mouth as well as how diffrent flavors blend together depending on what you season it with.
Max jerky flavour suggestion, maple and scotch bonnet peppers with a pinch of all spice.
This flavour came about using left over peppers from jarring up some jerk marinade.
BACON JERKY
Dick cheese has always been my favorite jerky. But you could call it duck cheese for political correctness
An aged balsamic caramelized onion jerky for me, and as an Ozzy very disappointed the grass fed one didn't rate higher. Another one for you to try if you can find it is an older retired dairy cow, some of our farmers have been selling them for better returns on the time invested, and I have to say that the taste is amazing.
as an aussie, I personally prefer grass-fed over wagyu. the beefiness you can find on some cuts is unmatched.
I think a Tiger cry flavor would be incredible for jerky. The combo of the slightly sweet marinade with the heat and funk from the spicy bird's eye chili, lime juice, and fish sauce (Nam Jim Jaew) could only make it a fantastic tasting experience and no doubt, a huge seller.

Durban Curry style. Ginger, Garlic, Masala Curry and Coriander(we use these on our Biltong often). Usually for lamb and chicken, but beef will work just fine with it

Grass fed A2 wagyu is amazing! Its what I buy in the UK, you can more of it and its cheaper lol. In Japan its actually what most people favour as A5 is awesome, but its very expensive and very rich, so great as a treat, but not on a wet Thursday in November.
It's up to preference. When I lived in Japan, I got tired of wagyu just cause it started to feel like I was eating beef bacon. I started buying Australian grassfed steaks after that for more chewiness and less grease.

Jerky flavour: Absolutely spicy korean barbeque sauce! A combination of gochujang (which has an amazing smoky/sweet/spicy flavour) with other classic korean bbq sauce ingredients such as soy sauce, garlic, ginger. Its the same kind of sauce you see on korean BBQ chicken, and there is a reason its so popular, its probably one of the greatest things someone can eat haha!
