The best way to get a good crust on chicken is to completely ditch the double batter method and just go straight from buttermilk into your flower mixture. Add a little cornstarch for extra crunch. This method results in a crust that actually sticks to the chicken without leaving that nasty layer of steamed flour. Consider this a secret from a fine dining fry cook

There's no such thing as "white American cheddar cheese" that appeared to just be sliced cheddar(cheddar is white, they add annato to make it yellow-orange for some reaaon). You should make your own lard too, I use the store bought stuff sometimes, but I love to make my own. I save the skin and fat whenever I break down pork shoulder( the one they call butt for some reason), not a huge yield, but if I save 4-5 shoulders worth, I can usually get enough for deep frying.
