I think this is the best toon shader I've ever seen in any type of 3D art. It is so consistent and polished looking, very impressive. With most toon shaders there's a clear flaw that break the illusion of such but this looks flawless. Splendid work.

He mentioned in the comment that he did not use lighting,
and most NPRs would look flawed because a large part of it is affected by lighting.
I guess he only used img texture + emission as nodes.
The advantage is that it only tests drawing ability, and the same results can be obtained with EEVEE or CYCLES, even if output to other software.
The flaw I always notice in most toon shaders is at angles on the model about 45-60 degrees on the model. It always seemed to taper off in a weird way. But this one handles that perfectly.
It's clean an polished because it's hand painted with no light or shadow simulation. Everything (shadows, highlights, base colours) is drawn manually so it's not a shader, it's "just" textures (which is still impressive since it looks so clean)
Yes, this is a texture based workflow. This workflow is inspired by Genshin Impact, since in Genshin all the highlights and shadows are painted on the textures. The shader is just used as a final touch, to give the models that Anime flare.
Why did you model the spikes instead of just using primitive cones? Also, I wish you spent more time on the painting process, since that's really what's so unique about your style.
No good reason for not using cones I usually make every shape out of a cube - out of habit. 😀
And as for the video format, I agree. I need to make my videos longer and more informative. I'm recording the new project right now. Let's see how the new video turns out keeping all the feedback in mind. 😀

Download a free Blender addon called "Outline Helper". On the addon, you have a button for adding and removing outlines. :D

Great work. Looks awesome. Technical comment on the video. Your voice is pretty quiet and your background music is pretty loud. Try setting the volume levels closer to each other. I have to turn up the souls to hear you and then have my ears blown out by the music

Yes, I am painting lighting into the textures and not using a shader at all. In the NPR community, this is called the "Genshin Impact" NPR style since that game does the same thing. So you want to paint the lighting the way it makes sense for your game.

You could use Painter to do this as well, but Photoshop is good too. It's up to you. Photoshop has a lot of tools for vector art.

I did not use Grease Pencil. I created a toon texture. It's basically a normal texture but toon style.

You didn't say anything about how the shader works.
I'm not actually using a shader, this is a texture used on an emissive material. You can't really export Blender shaders to a game engine, so I prefer this workflow. The good thing is that you can use this model in a game engine and it would look exactly like this.

I thought it will be toon shaded, not toon textured. Yet you do not explained how to make texture, how to do unwraps and correlate texture with unwraps.
Good made video but you missed the point of it. One part should be modeling, next texturing, and after that shading, so it would interract with lighting. You skipped texturing and never get to shading. Somehow your video called "toon SHADED crab".
Maybe i'm too harsh and asking to much of a production from small channel. Up to you to consider.
Valid feedback. I never really thought of that term "toon textured" before, but I like it. I might choose to use that term from now on. I actually don't use shaders at all inside of Blender since I want these models to be game ready, and you can't export Blender shaders.
